Too early!!

We got a little bit of snow the other night. Just a bit of covering. However, tonight we are getting a bigger storm, 7-10 inches!! Does Mother Nature realize it's only October? It's chilly in the house this morning also. We do have the wood stove going though so it will warm up soon.

We got home too late last night for me to continue. It took us over 3 hours to get home and it's normally about a 1 hour and 45 minute ride. We made it safely though. On the way home, we stopped at a Super Walmart so I could take advantage of some coupons. I didn't take a picture of my goods because I just wanted to get them put away and rest.

I got:
11 singe load packets of Tide detergent
2 boxes Idahoan potatoes (not mashed)
2 plums
2 peaches
5 lbs boneless, skinless chicken breasts
2 travel size Aquafresh toothpaste
1 box Poligrip strips

Total was $30.90
I used the following coupons:
(11) $2 off any size Tide
(2) $1 off any size Aquafresh
I had 2 coupons for one free Idahoan potoates
Walmart gives you the overage so I used the overage for the rest

Out of pocket: $4.76
If my husband didn't need the Poligrip strips, Walmart would have given me money. Actually, I probably would have gotten something else instead of getting money back.

I Love Pumpkin!!

I got this recipe from Hungry Girl. It is super delicious!!!

Pumpkin Bread

Ingredients:
One, 15 oz, can pure pumpkin
1 1/4 cups whole wheat flour
1/4 cup all purpose flour
1/2 cup egg substitute
1/2 cup splenda
1/4 cup brown sugar (not packed)
1/4 cup craisins or raisins, chopped
2 1/4 tsp baking powder
1 1/2 tsp cinnamon
1 tsp vanilla extract
1/2 tsp salt
1/3 tsp pumpkin pie spice

Directions:
Preheat oven to 350 degrees

In a large bowl, combine both types of flour, splenda, borwn sugar, baking powder, cinnamon, salt and pumpking pie spice.

In a medium bowl, mix together pumpkin, egg substitute and vanilla extract. Add this mixture to teh bowl with the dry ingredients adn stir until just blended.

Slowly sprinkle chopped craisins or raisins into the batter, making sure they don't stick together, and mix to distribute them.

Spoon batter into a large loaf pan sprayed with nonstick spray. Bake for about 50 mintues, until the top of the loaf is firm to the touch. Allow to cool, and then cut into 8 slices.

Makes 8 servings

Best dinner rolls!!

I got this recipe from Grocery Budget 101. This is the best Freezer rolls recipe I have ever made!!!

Freezer Yeast Rolls

 Create your own buttery rich yeast roll dough that can be frozen until needed. To make delicious rolls, simply take out as many frozen dough balls as needed and place in a greased pan for 2-3 hours.

1 cup milk (110 degrees F.)
1/2 cup butter, room temperature
1/4 cup granulated sugar
2 eggs, room temperature and lightly beaten
3/4 teaspoon salt
4 cups bread flour*
3 teaspoons instant yeast


I use a kitchenaid mixer for this recipe. In the mixer bowl, using the dough hook, combine the yeast, half the flour and all of the sugar. Add milk and eggs until smooth, add butter, salt and remaining flour until a nice soft dough forms.

Turn the dough onto a cookie sheet that has been lightly oiled. Knead until smooth and elastic. (You can actually leave this in your mixer and let your mixer knead it for 5-7 minutes if you don't feel like doing the work yourself).
Place the dough back in the mixer bowl, cover with saran wrap and let rest 10 minutes.

Form the dough into 16 small balls.

If baking immediately:
Place rolls in a lightly greased 9x13 pan, let rise until doubled in size.
Bake in a 375F oven that has been preheated for 20-25 minutes

If Freezing for later:
Place on a cookie sheet and place in the freezer until frozen solid. To use, remove from freezer, place in a greased 9x13, cover loosely with clean cotton towel in a warm spot, for 3-4 hours. Bake at 375 for 20-25 minutes

Speed Thaw Method:
Heat oven to 200F, place a loaf pan half full of boiling water into the oven, be careful it doesn't splash out at you. SHUT THE OVEN OFF. Place the frozen rolls in a 9x13 greased pan, put them in warm, moist oven with the door closed for 2 hours. Once thawed and risen, remove from oven, turn the oven on to 375F to preheat it and bake as directed above.

Creamy Chicken Croissants

Ingredients:
4 boneless skinless chicken breasts
1 cup onion, chopped
1/2 cube butter
1 package Philadelphia Cream Cheese
2 packages croissants
1 egg white, beaten (optional)
 
Directions:
Preheat oven to 350 degrees F. Place whole chicken breasts in boiling water for 10 minutes or until cooked.

In the meantime, saute the chopped onions in butter until soft. Add cream cheese to onion mixture and stir until smooth. Remove cooked chicken and cut into small chunks. Add chicken to cream cheese mixture and stir.

Unfold the packaged croissants to form 4 rectangles and place on a greased cookie sheet. Repeat to make 4 more rectangles for the top. Spoon the chicken mixture in the middle of the croissant square leaving room around the edges and place another croissant square on top. Pinch the croissant square edges together and tops closed to prevent mixture from running out. Brush tops with egg white wash (optional).

Bake in 350 degrees F oven for 12-15 minutes until croissant crust is golden brown.
 
 
Notes
You can make this recipe using low fat or fat free cream cheese and croissants and it tastes just as good.

Pumpkin Pie French Toast

This recipe is from Closet Cooking

Ingredients:
2 eggs
1/4 cup milk
1/4 cup pumpkin puree
1/4 teaspoon vanilla
1/2 teaspoon cinnamon
1/4 teaspoon ginger
1/8 teaspoon cloves
1/8 teaspoon nutmeg
2 tablespoons brown sugar
8 slices of bread


Directions:
1. Mix the eggs, milk, pumpkin puree, vanilla, cinnamon, ginger, cloves, mutmeg and brown sugar in low flat bowl for easy dipping.
2. Dip the bread into the egg mixture on both sides and grill in a pan until lightly golden brown, about 2-3 minute per side.
3. Serve with maple syrup.

Pumpkin Scones



  • 2 cups all purpose flour
  • 1/4 cup plus 3 tablespoons granulated sugar (we used turbinado)
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • 6 tablespoons cold butter, cut into 1-inch cubes
  • 1/2 cup canned pumpkin (we used our fresh pumpkin puree)
  • 3 tablespoons half-and-half
  • 1 large egg


  • Powdered Sugar Glaze (same credit)
    • 1 cup plus 1 tablespoon powdered sugar
    • 2 tablespoons milk

    Spiced Glaze (same credit)
    • 1 cup plus 3 tablespoons powdered sugar
    • 2 tablespoons milk
    • 1/4 teaspoon ground cinnamon
    • 1/8 teaspoon ground nutmeg
    • Pinch of ground ginger
    • Pinch of ground cloves

    Directions:

    Preheat your oven to 425 degrees and line a baking sheet with parchment paper.

    In a mixing bowl, whisk together the pumpkin, half-and-half, and egg. Set aside.

    Sift together into a large mixing bowl (or the bowl of your stand mixer) the flour, sugar, baking powder, salt, cinnamon, nutmeg, cloves, and ginger. Add the cubed butter on top.

    Now, either using a pastry blender or the paddle attachment of your stand mixer on medium speed, mix the butter and dry ingredients until your reach the consistency of coarse cornmeal (pieces of butter should be no larger than a small pea). Alternatively, you could probably do this step in your food processor, much like you would do for making pie crust.

    Now gradually fold the wet ingredients into the dry ingredients. We used a spatula for this step, but had to use our hands in the end to get that last bit of flour to incorporate into a well formed dough ball. As you can see above, the dough is pretty ragged, but that’s just fine. The important thing is to make sure all the dry ingredients have been moistened well.

    On a well-floured surface, flatten and form the dough into a 12″ x 4″ x 1″ thick rectangle.

    Using a sharp knife or pizza cutter, divide the rectangle into three equal pieces, then slice each piece into four triangular pieces by making an “X” through them

    Place the triangle of dough on the parchment-lined baking sheet and bake for just 15 minutes, or until light brown. Remove to a cooling rack and let cool before icing.

    Make up the powdered sugar glaze by mixing the milk and sugar until smooth, then paint the tops of the scones with the glaze using a pastry brush.

    While the first glaze is drying (10 minutes or so), make up the spiced glaze by combining all ingredients and mixing until smooth. Drizzle onto the scones using your favorite drizzling method (we put the glaze in a small ziplock bag and snip off the corner, as shown above).

    Homemade Ice Cream

    Today I made homemade cookie dough ice cream. I made some cookies out of some of the dough and crumbled them into the finished ice cream. Swirled a little chocolate syrup over it and topped with whip cream. My own homemade copycat "blizzard" treat. It was soooooo good. I did a basic ice cream from my ice cream maker instruction manual. After 15 minutes, I added broken up cookie dough and let it finish.

    Nice things

    While I was at the grocery store today, look what I came across
    Do you see that??????
    Yes, Pumpkin Spice!! I am so excited. Husband keeps asking me if I'm going to turn into a pumpkin! LOL

    Then I went over to Bath & Body Works and got these:

    Then after getting home from shopping, this gem was delivered
    It's an Edible Arrangement. It almost looks too good to eat, but husband and I have been munching off it since we got home from dinner. Which was excellent by the way. I got a baked stuffed haddock. The stuffing had lobster, shrimp & scallops in it. There was a side of angel hair with marinara sauce. Husband got a seafood lasagna, which also was lobster, shrimp & scallops. Then, of course, there were bread sticks with three different "dips". One was a butter, then an olive oil with parmesan cheese & crushed red pepper and the third we believe was a pimento cream cheese. We did not get dessert, way too full! LOL  Husband wouldn't let me take any pictures at the restaurant. He said that if I did, he would get up and leave. *sigh*

    Smells of fall

    Husband is lighting the woodstove for the first time this season and boy does it smell good!!!!
    I love heating our house by wood. The smells and the heat from it are wonderful in the crisp, cold air.
    As I said earlier, we are going to have freezing temps tonight. I already have my cold weather curtains up. They make a huge difference in maintaining the heat.

    What would be your ideal way to heat your house?
    New England Chop Suey

    1 Box Elbow Macaroni
    1 Can Diced tomatoes
    1 lb Ground Turkey- Italian
    2 tsp minced garlic
    1/2 finely chopped onion
    ---------------------------------------
    serves 4-6

    Boil the macaroni until tender, in the meantime, brown the ground turkey, add the onions, cooking until the translucent. Add 1 can diced tomatoes (un-drained), minced garlic and a sprinkle of garlic salt, italian seasoning, chopped fresh basil (basically whatever you have on hand that you like).

    Drain macaroni, add the seasoned  burger/tomato mix. Stir, and serve hot.

    Without using coupons I can make this meal for under $2.75 .
    Using coupons (for the macaroni and canned tomatoes, I can usually make this meal for about $2.12).

    Last produce of the season

    I went out and picked the last of the "pickable" vegetables in my garden today. We are supposed to have freezing temps tonight for the first time. My garden was very disappointing this year but we did eat a bit out of it. I'm hoping next year will be much better!

    Homemade Tortillas

    I made homemade flour tortillas today for tonight's dinner. My husband hates it when I BUY tortillas, so I have stopped buying them.


    Flour Tortillas

    2 cups all purpose flour (can substitute 1 cup wheat if wanted)
    1.5 tsp baking powder
    1 tsp salt
    2 tsp vegetable or olive oil
    3/4 cup warm milk

    Mix dry ingredients, then slowly add the milk and oil while stirring. Knead on floured surface until dough becomes firm and soft. Let rest for 20 minutes.
    Divide dough into 8 sections, roll into balls, and let rest another 20 minutes. The resting is so the dough can be rolled out nicely and isn't elastic-y.
    Roll dough on floured surface into a circular shape about 8 inches in diameter. Follow the same procedure for rolling out a pie crust.
    Cook the tortillas on a dry skillet over high heat, about 30 seconds or so on each side. They're done if you see very light browning on any bubbled areas. Flip and cook the other side.
    Finished tortillas should still be soft and resemble the same texture as flour tortillas. They can be stored in the fridge in a plastic bag or foil until used. You can also freeze these in an airtight container or bag.

    Husband and I went to the Windfire Tavern for dinner tonight. They only have pies and hot dogs on their menu. We had a Meat Lovers Pie. I also had a Smuttynose Pumpkin Ale . This is the first time I've ever had one and I like it. It's a bit strong for me but still enjoyed it. They put cinnamon and sugar around the glass rim.
    I am getting used to blogging her on Blogger but I'll eventually start posting pictures with my posts.
