Skinny Meatloaf Cupcakes with Mashed Potato Frosting

Ingredients:

For the Meatloaf Cupcakes:
  • 1.3 lb 93% lean ground turkey
  • 1 cup grated zucchini, all moisture squeezed dry with paper towel
  • 2 tbsp onion, minced
  • 1/2 cup seasoned breadcrumbs
  • 1/4 cup ketchup
  • 1 egg
  • 1 tsp kosher salt

For the Skinny Mashed Potato "Frosting":
  • 1 lb (about 2 medium) Yukon gold potatoes, peeled and cubed
  • 2 large garlic cloves, peeled and halved
  • 2 tbsp fat free sour cream
  • 2 tbsp fat free chicken broth
  • 1 tbsp skim milk
  • 1/2 tbsp light butter
  • kosher salt to taste
  • dash of fresh ground pepper
  • 2 tbsp fresh thyme

Directions:

Put the potatoes and garlic in a large pot with salt and enough water to cover; bring to a boil. Cover and reduce heat; simmer for 20 minutes or until potatoes are tender. Drain and return potatoes and garlic to pan. Add sour cream and remaining ingredients. Using a masher or blender, mash until smooth. Season with salt and pepper to taste.

Meanwhile, preheat the oven to 350°. Line a muffin tin with foil liners.

In a large bowl, mix the turkey, zucchini, onion, breadcrumbs, ketchup, egg, and salt. Place meatloaf mixture into muffin tins filling them to the top, making sure they are flat at the top.

Bake uncovered for 18-20 minutes or until cooked through. Remove from tins and place onto a baking dish.

Pipe the "frosting" onto the meatloaf cupcakes and serve.

Makes 12
Onion, Garlic, Cheese Bread

1 cup warm water -- plus
1 tablespoon warm water
3 cups bread flour
2 tablespoons powdered milk
2 tablespoons white sugar
1 1/2 teaspoons salt
2 tablespoons butter or margarine
2 teaspoons active dry yeast
2 teaspoons garlic powder
3 tablespoons onion flakes
1 cup shredded sharp Cheddar cheese

Add water, flour, powdered milk, sugar, salt, butter or margarine and
yeast into bread machine in the order suggested by your machine's
manufacturer. Set for basic cycle with the light crust.

When alert sounds or when indicated by your manufacturer add the garlic
powder, 2 tablespoons of the onion flakes and all of the shredded cheese.
After the last knead sprinkle the remaining tablespoon of onion flakes
over dough.

Enjoy hot and fresh bread.

This recipe yields a 1 1/2 pound loaf.

Low Fat Creamy Italian Salad Dressing


  • Prep Time: 5 mins
  • Total Time: 5 mins
  • Serves: 16, Yield: 1.25 cups

Ingredients

    • 1 cup low-fat sour cream
    • 2 teaspoons red wine vinegar or 2 teaspoons white wine vinegar
    • 2 teaspoons dry white wine
    • 2 garlic cloves
    • 3 teaspoons italian seasoning
    • 1 teaspoon Dijon mustard
    • 1 teaspoon honey
    • 1 teaspoon grated parmesan cheese
    • 1 teaspoon olive oil
    • ½ teaspoon black pepper

Directions

  1. In a blender or food processor, process all ingredients except sour cream until completely mixed.
  2. Add sour cream and process just until mixed.

 

Low-Fat Honey Mustard Dressing

Serves/Makes: 0.75 cup | Difficulty Level: 2 | Ready In: < 30 minutes

Ingredients:
1/2 cup low-fat mayonnaise
1/4 cup mustard
1/4 cup honey
2 tablespoons lemon juice

Directions:
Combine and refrigerate in tightly sealed container.

Cheesy Chicken & Broccoli Rice Casserole

Serves 6-8

Ingredients:
2 cups (uncooked) medium grain brown rice (could use white rice)
Chicken broth
3 cups broccoli
1/4 cup sliced green onions
2 chicken breasts, cut into chunks & seasoned with salt, pepper & garlic powder
Non-stick spray
5 teaspoons all-purpose flour
2 cups skim milk, divided
1/3 cup sour cream
12oz shredded sharp cheddar cheese, divided
1/4 teaspoon garlic powder
1/2 teaspoon pepper
1 teaspoon salt


Directions:
1. Cook rice according to package directions, substituting water for chicken broth. When rice has 5-7 minutes left until fully cooked, add broccoli and green onions into the pot to steam.
2. Meanwhile, heat a large skillet sprayed with non-stick spray over medium-high heat and cook seasoned chicken until done. Remove to a plate and carefully wipe out the inside of the skillet with a paper towel.
3. Turn heat down to medium then whisk together flour and 1/2 cup milk in the skillet. Gradually add remaining 1 1/2 cups milk while whisking constantly, until mixture is boiling. Turn off heat and add 8oz shredded cheese and sour cream. Stir until smooth. Season sauce with garlic powder, salt and pepper then mix.
4. Combine cooked rice/broccoli/green onion mixture, chicken and cheese sauce, then stir to combine. Pour mixture into a non-stick sprayed 9×13 casserole dish and top with remaining 4oz of cheese. Broil until cheese is golden brown. Let casserole cool for 5 minutes before serving.

Low Fat Buttermilk Ranch Dressing
Prep Time: 20 MinutesReady In: 50 Minutes

Ingredients:
1 1/3 cups low-fat buttermilk
2/3 cup low-fat mayonnaise
2/3 cup low-fat sour cream
1 teaspoon garlic powder
1 teaspoon onion powder
2 teaspoons chopped fresh chives
2 teaspoons chopped fresh dill
2 teaspoons chopped fresh
parsley
1 teaspoon salt
1/4 teaspoon pepper
Directions:
1.Whisk together the buttermilk, mayonnaise, and sour cream in a bowl. Stir in the garlic powder, onion powder, chives, dill, parsley, salt, and pepper. Cover and refrigerate at least 30 minutes before serving.

Mile High Biscuits

3 c flour
1 T sugar
3 t baking powder
1/2 t cream of tartar
salt
1/2 c shortening
1 egg
1.25 c milk


–Sift dry ingredients together.
–Cut in shortening
–Add egg and milk
–Mix well then knead for a minute or so.
–Cut into biscuits and bake at 475 for 20 minutes or till done.
This recipe also freezes very well, I double the recipe and once frozen on a cookie sheet place them in a zip lock bag for future use. When baking put biscuits on a cookie sheet and place in cold oven. Turn oven to 400. Bake for about 30 minutes or until done!!
Copycat Oatmeal Creme Pies

Cookies:
1 1/4 cup softened butter
1 cup packed brown sugar
1/2 cup sugar
1 1/2 cup flour
3 cups oats
1 egg
2 tsp vanilla
2 tsps baking soda
1/2 tsp salt
1/4 tsp cinnamom

Heat oven to 375. Beat butter & sugar until creamy. Add egg & vanilla; mix well. Lightly spoon flour into dry measuring cup and level with flat knife edge. Combine flour, soda, salt & cinnamon in a bowl; stir. Add oats and mix well. Add to butter mix and blend well. Drop by rounded tablespoons, 2 inches apart on baking sheets lined with parchment paper. Bake for 10 min. Leave in pan to cool for 2 minutes. Put cookies on wire rack to finish cooling.

Creme Filling:
1/2 cup softened butter
2 cups powdered sugar
1-2 Tbsp whipping cream
1 tsp vanilla

Combine all in a medium bowl. Beat on low until mixed well. Then beat on high until light & fluffy.
Spread one tablespoon of filling between 2 cookies.

I am behind in posting recipes. Here is one for now. I made this with dinner tonight.

Stovetop Macaroni and Cheese

Yield: 4 servings

Prep Time: 20 minutes | Cook Time: 20 minutes

2 eggs
1 (12-ounce) can evaporated milk, divided
1 teaspoon dry mustard
1 teaspoon water
½ teaspoon salt, plus additional 1½ teaspoons for pasta water
¼ teaspoon ground black pepper
8 ounces (2 cups) elbow macaroni
4 tablespoons unsalted butter
4 ounces mild Cheddar cheese, shredded (about 1 cup)
4 ounces American cheese, shredded (about 1 cup)
4 ounces Monterey Jack cheese, shredded (about 1 cup)

1. In a small cup, dissolve the dry mustard in the water; set aside.

2. In a medium bowl, whisk together the eggs, 1 cup of the evaporated milk, dry mustard mixture, salt, and pepper; set aside.

3. Bring 2 quarts of water to a boil in a large Dutch oven. Add the pasta and 1½ teaspoons salt and cook, stirring often, until al dente. Drain the pasta and return to the pot over low heat. Add the butter and stir until completely melted.

4. Add the egg mixture and three-quarters of the cheese mixture to the pasta and toss until thoroughly combined and the cheese starts to melt. Gradually add the remaining evaporated milk and remaining cheese mixture, stirring constantly, until the mixture is hot and creamy, about 5 minutes. Serve immediately.
