D.I.Y. Hummingbird Food

Hummingbird Food~
3:1 Ratio

2 cups sugar
6 cups water

Place sugar and water in a sauce pot and bring to a boil. Boil for 6 minutes. Watch and stir often so the syrup does not boil over. Remove from stove and let cool to room temperature. Add a few drops of food coloring if desired. Easy as 1-2-3.

Korean Fried Zucchini (Hobak Jun)

A delicious and healthy Korean side dish, Hobak Jun (or Jeon) is easy to prepare and goes well with almost every Korean meal. The zucchini is coated in a thin batter of flour and egg, sauteed on both sides, and served with soy sauce for dipping.

Korean Fried Zucchini

 

Prep Time: 5 minutes

Cook Time: 15 minutes

Total Time: 20 minutes

Ingredients:

  • 1 medium-large zucchini, sliced into 1/4 inch coins
  • 1/2 Cup Flour
  • 2 eggs, beaten
  • 2 tsp salt
  • 1-2 Tbsp vegetable or olive oil (for saute pan)

Preparation:

  1. Distribute 1 tsp salt over zucchini slices.
  2. Add remaining 1 tsp salt to beaten egg.
  3. Put flour and egg in separate shallow dishes next to stove.
  4. Heat lightly greased saute pan to medium heat.
  5. Coat zucchini coins first with flour, and then dip and coat with beaten egg and place into pan.
  6. Saute zucchini for about 3-4 minutes per side, turning once, or until they are a light golden brown.
  7. You can serve with the basic or spicy dipping sauces or nothing at all.

    (Serves 4 as a side dish).

Crab Stuffed Baked Halibut

Crab Stuffed Baked Halibut

Tender morsels of crab (I used bay scallops successfully also) drizzled in garlic butter, wrapped in tender flaky halibut fillets and topped with a creamy sauce.
If you don't have halibut, this recipe works well with any light whitefish such as haddock or cod.

2 Halibut Fillets
1/2 stick butter, melted
1/4 tsp lemon pepper seasoning
1 cup crab meat
1/2 sleeve ritz crackers, crushed
1/2 tsp minced garlic
3 T. minced Onion
1/2 cup Sour Cream
1/3 cup mayonnaise
1/3 cup Parmesan Cheese, grated
1 tsp lemon pepper seasoning
panko bread crumbs

In a small bowl mix melted butter, garlic, 1/2 sleeve of crushed butter crackers, minced onions, mixing well. Add a sprinkle of salt and pepper and then add crab meat.

In a separate small bowl mix sour cream, mayo, lemon pepper seasoning and parmesan cheese together. Lay the filets flat, spread liberally with the crabmeat mixture, roll them up, place in an oven safe ramekin. Spread with sour cream mixture, top with panko bread crumbs.

Bake at 375F for 20 minutes or until fish flakes. Serve with a fresh garden salad

Balsamic and Brown Sugar Glazed Pork Roast

Balsamic and Brown Sugar Glazed Pork Roast

Time: 10 minutes prep + 4-6 hours cooking

Yield: 6 servings

 
1 2 pound pork loin
1 t sage
1/2 t salt
1/4/ t pepper
1 t garlic
1/2 C water

Glaze:
1/2 C brown sugar
1 T cornstarch
1/4 C balsamic vinegar
1/2 C water
2 T soy sauce

1. Place your pork roast on a pan, or plate.
2. In a small bowl combine the salt, pepper, rubbed sage, and garlic. Press the seasonings into the pork roast. Spray the inside of your crock pot with cooking spray. Place the seasoned pork roast inside and pour the water along the edges of the roast.
3. Cover and cook on low for 4-6, depending on how hot your crock pot cooks things. You are looking for an internal temperature of 180 degrees.
4. In a small sauce pan, combine the glaze ingredients. Bring it to a boil while stirring and let the sauce thicken. (Should only take a couple of minutes.)
5. Drizzle some of the glaze over the top of the roast and let it cook for another 30 minutes.
6. Remove the roast from the crock pot and let it sit for about 5 minutes. Slice it thinly, drizzle the remaining sauce over the top and your are ready to eat. It's fabulous served with rice and a green veggie...or with roasted vegetables.

Ingredients:
1 cup Gold Medal® unbleached or all-purpose flour
1/4 cup unsweetened baking cocoa
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup sugar
1/4 cup margarine or butter
1 egg white
1/2  cup 1% milk
3/4 cup marshmallow creme
 
Instructions:                                          
  • Step 1 Heat oven to 425°F.
  • Step 2 In medium bowl, combine flour, cocoa, baking soda and salt.
  • Step 3 In large bowl, beat sugar, margarine and egg white with electric mixer on medium speed 2 minutes or until fluffy. Stir in flour mixture. Stir in milk just until blended.
  • Step 4 Drop dough by rounded tablespoons onto large ungreased baking sheets to make 32 cookies. Bake 5 minutes or until tops spring back when lightly touched.
  • Step 5 Place baking sheets on a rack to cool completely. Spoon about 2 teaspoons marshmallow crème on bottoms of 16 cookies. Top filled cookies with the remaining 16 cookies.
