Chicken and Stuffing Bake

ONE-DISH CHICKEN AND STUFFING BAKE

.

This is adapted from a Stove Top stuffing recipe printed on the box. This is one of those simple but delicious meals you'll make over and over.

.

1 box (6 ounces) Chicken stuffing mix

1-1/4 cups hot water

1/4 cup butter, softened

4 boneless, skinless chicken breasts

Paprika

Pepper

1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted

1/3 cup milk

.

1. In medium bowl, mix stuffing crumbs, contents of seasoning packet, water and butter until moistened; set aside.

2. Sprinkle chicken breasts lightly with paprika and pepper; place in a lightly greased 11x7-inch baking dish.

3. In a small bowl, combine soup and milk. Pour over chicken. Top with stuffing.

4. Cover and bake at 375ยบ for 35 minutes until chicken is no longer pink. Yield: 4 servings.

I did go over! But I'm ok with that. Saturday was the first time I'd been shopping at Sam's Club so I stocked up on some bulk items.

Skillet Cheddar Scones

 SKILLET CHEDDAR SCONES

 

2 cups flour*

1 tbsp. sugar

1 tsp. cream of tartar

1/2 tsp. baking soda

1/2 tsp. salt

1/4 cup light butter, chilled and cut in bits

1/2 cup shredded reduced fat Cheddar cheese

2/3 cup milk

 

1. Mix flour, sugar, cream of tartar, baking soda and salt in a medium bowl. Cut in light butter until mixture resembles coarse crumbs. Gently stir in cheese. Stir in milk just until dough forms (do not overmix).

2. Grease 10-inch cast iron skillet. Press dough into 3/4-inch thick round on a lightly floured surface. Cut into 8 wedges. Place wedges in skillet.

3. Bake in preheated 350ยบ oven for 15 minutes or until puffed and bottom is light brown. Turn wedges over; cook 10 to 15 minutes longer or until cooked through. Yield: 8 servings.

 

*Useful Tip:  For a cornbread scone, substitute 1/2 of the flour with cornmeal.

Chili Mac

CHILI MAC

.

1 pound lean ground beef 

1 medium onion, chopped

1 clove garlic, minced

1 can (14-1/4 ounces) tomatoes, cut up

2 cups water

1 can (8 ounces) tomato sauce

1 tbsp. chili powder

1/2 tsp. oregano

8 ounces uncooked elbow macaroni

1 can (15-1/4 ounces) dark red kidney beans, undrained

.

1. Brown ground beef, onion and garlic in a 3-quart saucepan; drain.

2. Return beef mixture to saucepan. Add tomatoes, water, tomato sauce and seasonings; bring to a boil. Reduce heat; cover and simmer 10 minutes.

3. Stir in uncooked macaroni and kidney beans. Bring to a boil; reduce heat to medium heat. Simmer 9 to 10 minutes or until macaroni is tender, stirring occasionally. Yield: 6 servings.
