White bread

Prep Time: 3 hours

Cook Time: 45 minutes

Total Time: 3 hours, 45 minutes

Ingredients:

  • 3/4 cup warm water
  • 1 package active dry yeast
  • 1 tsp salt
  • 1-1/2 tbsp sugar
  • 1 tbsp vegetable shortening
  • 1/2 cup milk
  • 3 cups all-purpose flour, approximately
(I make this in my bread maker. Just put the ingredients in the pan according to the manufacturers directions.)

Preparation:

  1. In large bowl, add the warm water. Slowly stir in dry yeast. Continue to stir until yeast is dissolved.
  2. Add salt, sugar, shortening, and milk to bowl. Stir.
  3. Mix in the first 2 cups of flour.
  4. If needed, begin adding more flour, one tablespoon at a time, until the dough chases the spoon around the bowl.
  5. You do not need to use up all the flour called for in this recipe, or you may need more flour than called for. The amounts vary depending on many factors, including weather, which is why most bread recipes only give an approximate amount of flour needed.
  6. Turn dough out onto floured board and knead, adding small spoonfuls of flour as needed, until the dough is soft and smooth, not sticky to the touch.
  7. Put dough in buttered bowl, turn dough over so that the top of dough is greased. Cover and let rise in warm spot for 1 hour.
  8. Punch down dough. Turn out onto floured board and knead.
  9. Preheat oven at 375 degrees F.
  10. Form dough into loaf and set in buttered bread pan. Cover and let rise for about 30 minutes.
  11. Score dough by cutting three slashes across the top with a sharp knife. Put in oven and bake for about 45 minutes or until golden brown.
  12. Turn out bread and let cool on a rack or clean dishtowel.

The Best Easy Beef and Broccoli Stir-fry

Ingredients

    • 3 tablespoons cornstarch, divided
    • 1/2 cup water, plus
    • 2 tablespoons water, divided
    • 1/2 teaspoon garlic powder
    • 1 lb boneless round steak or 1 lb charcoal chuck steaks, cut into thin 3-inch strips
    • 2 tablespoons vegetable oil, divided
    • 4 cups broccoli florets
    • 1 small onions, cut into wedges
    • 1/3 cup soy sauce
    • 2 tablespoons brown sugar
    • 1 teaspoon ground ginger
    • hot cooked rice

Directions

  1. In a bowl, combine 2 tablespoons cornstarch, 2 tablespoons water and garlic powder until smooth.
  2. Add beef and toss.
  3. In a large skillet or wok over medium high heat, stir-fry beef in 1 tablespoon oil until beef reaches desired doneness; remove and keep warm.
  4. Stir-fry broccoli and onion in remaining oil for 4-5 minutes.
  5. Return beef to pan.
  6. Combine soy sauce, brown sugar, ginger and remaining cornstarch and water until smooth; add to the pan.
  7. Cook and stir for 2 minutes.
  8. Serve over rice
Spicy Honey Chicken
Kimmy's Kitchen

Ingredients:
8 boneless skinless chicken thighs, about 2lbs
2 teaspoons vegetable oil

Rub:
2 teaspoons granulated garlic
2 teaspoons chili powder
1/2 teaspoon onion powder
1/2 teaspoon coriander
1 teaspoon kosher salt
1 teaspoon cumin
1/2 teaspoon chipotle chili powder

Glaze:
1/2 cup honey
1 Tablespoon cider vinegar

Directions:
1. Combine the rub spices in bowl and mix well.
2. Use kitchen shears (or a pair of clean scissors) to trim off any excess fat from the chicken pieces. Pat dry. Drizzle oil over chicken and rub in with your hands to lightly coat all the pieces.
3. Toss chicken with the spice rub to coat all sides well. Let the chicken marinate in the fridge with the spice rub for at least an hour.
4. Grill chicken for 3-5 minutes on each side, until cooked through.

5. While chicken is cooking, warm honey in the microwave so it’s not so thick. Add the vinegar and combine well. Reserve 2 Tablespoons honey glaze for later. Take the rest of glaze and brush on chicken (both sides) in the final moments of grilling.
6. Take the chicken off the grill and drizzle with the extra 2 Tablespoons of glaze. Enjoy!

EGG BREAD

This bread is so "simple and basic", yet it remains our favorite!

2 beaten eggs plus enough water to equal 1 cup + 2 tbsp.
1-1/2 tbsp. butter
1 tsp. salt
2 tbsp. sugar
3 cups bread flour
3 tbsp. dry milk
2 tsp. yeast
.
1. Put eggs into measuring cup first, then add water to reach 1 cup + 2 tbsp.
2. For ABM, add ingredients into pan as listed above. Basic Bread setting. Yield: 1-1/2 pound loaf.
3. By hand, dissolve yeast in warm (105-110º) egg-water mixture. Stir in butter, salt, sugar, flour and dry milk. Stir until well blended. Knead for several minutes until dough is elastic (about 3 minutes using a Kitchen Aid Stand Mixer or 6 to 8 minutes by hand). Let dough rise in a greased, covered bowl in a warm spot for one hour, or until double in bulk. Punch dough down and shape into a greased 9-1/2x5-1/2-inch loaf pan. Cover and let rise again for one hour, or until double in bulk. Bake at 375º for 30-35 minutes. Remove from pan and let bread cool on wire rack.
Yellow Cake - Adapted from Rachel

2 3/4 C flour
2 1/2 tsp. baking powder
1 tsp. salt
1 1/2 C sugar
1/2 C butter, oil, shortening, or lard*
2 eggs
1 1/2 tsp. vanilla
1 1/4 C milk

*I used ~1/3 C applesauce and the remaining bit was topped off with olive oil

Mix together the flour, baking powder and salt. In your mixing bowl, cream together the sugar and oil/butter/lard until light and fluffy.

Then, add in the eggs, one at a time, along with the vanilla. Mix well.

Add the flour mix alternately with the milk beating until you have a smooth batter.

Pour into greased baking pans -- I used 2 9-inch round cake pans.

Bake at 350 for 25-30 minutes, until the cake springs back when touched and a toothpick comes out clean. Cool in the pan for a few minutes, and then invert onto a wire rack to cool completely.

Then, frost with dark chocolate decadent frosting....

Vanilla Ice Cream


Nature Center Vanilla Ice Cream - Finding Joy in My Kitchen*

3/4 C sugar {you can get buy with a little less}
16 oz Half and Half
8 oz. whipping cream
2-4 tsp. vanilla {depending on how strong you like it!}

Freeze your ice cream maker bowl...overnight is usually best.

In a large bowl combine sugar, half and half and and cream; stir until sugar is dissolved.
Add in vanilla, to taste, and stir to combine.

Then, carefully pour into the ice cream maker following the machine directions.
I've found it easy to use a 3-4 C liquid measuring cup (with a spout) to mix about half
of the ingredients together and then all the remaining liquids immediately to the
ice cream maker after pouring in the liquids from the measuring cup.

Let the ice cream "make" for 30-40 minutes (depending on your desired thickness, and machine).
Serve right away, if you like a soft-serve consistency.

Otherwise, scoop into freezer-friendly containers and chill for 2 hours to enjoy
hard scoop ice cream.

This ice cream freezes well for 1-2 weeks. We like to store it is 2-3 C freezer-friendly containers;
that way, we can defrost just what the two of us will eat, keeping the rest fresh!

This is hands down THE best cake I think I've ever eaten!!

 

Chocolate Cheesecake Cake

Yield: 12 to 14 servings
Prep Time: 1 hr + cooling and chill times
Cook Time: 1 hour 15 min

This cake is for big time chocolate- lovers...

Ingredients:

CHOCOLATE CHEESECAKE:
5 ounces bittersweet chocolate (70% cocoa), chopped
Two 8-ounce packages cream cheese, at room temperature
1/2 cup + 3 tablespoons granulated white sugar
2 tablespoons unsweetened cocoa powder
2 large eggs

CHOCOLATE CAKE:
1 3/4 cups all-purpose flour
1 1/2 cups granulated white sugar
2/3 cup unsweetened cocoa powder (not Dutch process)
1 1/2 teaspoons baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon instant espresso powder
3 large eggs, at room temperature
1 1/4 cups buttermilk, divided
3/4 cup unsalted butter, at room temperature
1 teaspoon vanilla extract

CHOCOLATE SOUR CREAM FROSTING:
2 cups semisweet chocolate chips
1/2 cup (1 stick) unsalted butter, at room temperature
1 cup sour cream
2 tablespoons light (white or golden) corn syrup

Directions:

1. Prepare the cheesecake layer: Preheat oven to 325 degrees F. Place a large roasting pan on the lower third rack of the oven. Place a kettle of water on the stove to boil. Spray a 9-inch springform pan with nonstick spray and line the bottom with a round of parchment paper. Wrap a double layer of foil around the bottom and up the sides of the pan (you want to seal it so the water from the water bath doesn't seep into the pan). Place chocolate in a medium glass bowl. Melt in the microwave in 30 second bursts until the chocolate is melted and smooth, stirring after each burst. Set the chocolate aside and let it cool off until it is lukewarm but still pourable. In a large bowl, use an electric mixer to mix the cream cheese- blend until it is nice and smooth and creamy. Mix in sugar and cocoa powder and blend until incorporated, scraping down sides of the bowl as needed. Add eggs, one at a time, blending after each addition. Mix in the lukewarm chocolate. Mix until smooth. The batter will be very thick- scrape it into the prepared pan and smooth the top. Set the pan into the roasting pan in the pre-heated oven. Carefully pour the hot water from your kettle into the roasting pan (it will fill the pan surrounding the cheesecake). Pour enough water so that there is about an inch of water coming up the foil along the sides of the cheesecake pan. Bake the cheesecake for 45 minutes. It should be set to the touch and not jiggly. Remove the cheesecake from the roasting pan and let it cool on a wire rack for at least an hour. When it has cooled, place the pan into the freezer and let the cheesecake freeze completely. This can be done in several hours- or overnight.

2. Prepare the cake layers: Preheat oven to 350 degrees F. Grease and flour two 9-inch round metal baking pans (or spray with nonstick baking spray with flour). In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder and salt. Add espresso powder, eggs, 1/4 cup of the buttermilk, butter and vanilla to the flour mixture. Using an electric mixer on medium-low speed, beat for 1 minute, until blended. Scrape sides and bottom of bowl with a rubber spatula. Beat on high speed for 2 minutes. Add the remaining buttermilk and beat on low speed for 15 to 30 seconds, until just blended. Spread the batter evenly into the prepared pans, dividing equally. Bake 30 to 35 minutes or until a toothpick inserted in the center comes out with a few moist crumbs attached. Let cool in pans on a wire rack for 10 minutes. Run a knife around the edge of the pans, then invert cakes onto a rack to cool completely.

3. Prepare the frosting: In a large microwave-safe bowl, combine the chocolate chips and butter. Microwave 1 to 2 minutes, stopping every 30 seconds to stir, until melted and smooth. Whisk the sour cream and corn syrup into the chocolate mixture until smooth. Cover and refrigerate for at least 30 minutes or until firm enough to spread.

4. Assemble the cake: Place one cake layer into the center of a cake plate or platter. Remove the cheesecake from the freezer, take off the sides of the pan, and slide a knife under the parchment to remove the cheesecake from the pan. Peel off the parchment. Measure your cheesecake layer against the cake layers. If the cheesecake layer turns out to be a slightly larger round than your cake, move it to a cutting board and gently shave off some of the exterior of the cheesecake (with a sharp knife) to get it to the same size as your cake layers. Place the cheesecake layer on top of the first cake layer. Place the 2nd cake layer on top of the cheesecake.

5. Frost the cake: Apply a crumb coat layer to the cake- use a long, thin spatula to cover the cake completely with a thin and even layer of frosting. Be sure to wipe off your spatula each time you are about to dip it back into the bowl to get more frosting (this way you won't be transferring any crumbs into the bowl of frosting). Don't worry at this point about the crumbs being visible in the frosting on the cake. When your cake has a thin layer of frosting all over it, place it into the refrigerator for 30 minutes to "set" the frosting. Once the first layer of frosting is set, apply the 2nd layer. Start by adding a large scoop of frosting onto the top of the cake. Use a long, thin spatula to spread the frosting evenly across the top and then spread it down the sides of the cake too. Because you applied a crumb-coat layer, you shouldn't have any crumbs floating around in the final frosting layer. Decorate, as desired. I recommend white chocolate shavings (see *Tips below). Keep this cake refrigerated.

Tips:

*Using a good quality bittersweet chocolate will make a difference in this recipe. Splurge for Scharffen Berger or something similar.
*For making white chocolate shavings: Purchase a hunk of white chocolate and a hunk of dark chocolate. Microwave the chocolate to soften it up slightly (15 to 30 seconds, depending on the size). Use a potato peeler to run down the side of the chocolate to create shards/shaves/curls of chocolate. I like to shave it onto a paper plater and then just use the plate to slide the chocolate onto the top of the cake.
*If you are serving this cake at a party, it's perfectly okay to leave the cake at room temperature for an hour or so while serving. Otherwise, keep it refrigerated.

Light Oat Breat-Bread Machine

Prep Time: 5 minutes
Yield: 1 1/2 pound loaf

Ingredients

  • 1 1/4 cups water
  • 2 tablespoons margarine
  • 1 teaspoon salt
  • 3 cups all-purpose flour
  • 1/2 cup rolled oats
  • 2 tablespoons brown sugar
  • 1 1/2 teaspoons active dry yeast

Instructions

  1. Add ingredients to bread machine pan in order recommended by your manufacturer. Use regular light setting.

I found this recipe at Cooking During Stolen Moments.
I made this in my bread maker.


Tomato Basil Bread
  • 1 pkg. active dry yeast (or 2 1/4 t. yeast)
  • 3/4 c. warm water
  • 1/4 c. minced fresh basil (or 2 t. dried basil, oregano, or Italian seasoning)
  • 1/4 c. grated Parmesan cheese
  • 2 T. tomato paste
  • 1 T. sugar
  • 1 T. olive oil
  • 1 t. salt
  • 1/8 – 1/4 t. crushed red pepper flakes
  • 2 1/4 – 2 1/2 c. flour (I use half whole wheat flour, half white flour)
1. In a mixing bowl, dissolve yeast in water. Stir in basil, Parmesan cheese, tomato paste, sugar, oil, salt, pepper flakes and 2 c. flour. Stir in enough remaining flour to form a stiff dough. Turn onto a floured surface; knead until smooth and elastic, about 3-5 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour.
2. Punch dough down; knead for 1 minute. Shape into a round loaf. Place on a greased baking sheet. Cover and let rise until doubled, about 1 hour. With a sharp knife, cut a large X in top of loaf. Bake at 375 degrees for 35-40 minutes or until golden brown. (I would recommend you start checking after 25 minutes. My bread always seems to be done by 30 minutes.) Remove from pan to a wire rack to cool.

Carrot Cake Cookie Sandwiches

Yield Makes about 25 sandwiches         

Ingredients

  • 1 cup packed light-brown sugar
  • 1 cup granulated sugar
  • 1/2 pound (2 sticks) unsalted butter, room temperature
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 2 cups old-fashioned rolled oats
  • 1 1/2 cups finely grated carrots, (about 3 large carrots)
  • 1 cup raisins
  • Cream Cheese Frosting

Directions

  1. Preheat oven to 350 degrees. Line two baking sheets with Silpat baking mats or parchment paper, and set aside. In the bowl of an electric mixer fitted with the paddle attachment, combine sugars and butter; beat until light and fluffy, 3 to 4 minutes. Add eggs and vanilla, and beat on medium speed until well combined.
  2. In a large bowl, sift together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger; stir to combine. Gradually add flour to butter mixture; mix on a low speed until just blended. Mix in oats, carrots, and raisins. Chill dough in refrigerator until firm, at least 1 hour.
  3. Using a 1/2-ounce ice-cream scoop, scoop dough onto prepared baking sheets, leaving 2 inches between cookies. Transfer to oven, and bake until browned and crisped, rotating pan halfway through baking to ensure even color, 12 to 15 minutes. Transfer to a wire rack to cool. Repeat baking process with remaining dough. Once cooled completely, use an offset spatula to spread about 2 teaspoons of cream-cheese filling onto a cookie. Sandwich together with a second cookie. Repeat with remaining cookies. Store in an airtight container for up to 3 days in the refrigerator.

Rockfish with Crab Cream Sauce from OLD BAY®
Rockfish has long been considered one of the greatest treasures in the Chesapeake Bay watershed. With a delicately seasoned cream sauce and lumps of tender crabmeat, this delicious recipe is sure to make dinner a memorable occasion for all.

Ingredients
3 tablespoons butter, divided
1 1/2 pounds rockfish fillets
1 1/2 teaspoons OLD BAY® Seasoning
2 tablespoons white wine
1 green onion, finely chopped
1 cup heavy cream
2 teaspoons Dijon mustard
8 ounces lump crabmeat

Directions
In a large skillet, melt 2 tablespoons butter on medium-high. Season flesh side of fish with 1 teaspoon OLD BAY. Place fish, skin-side up, in skillet. Cook 5 minutes, turning fish after 3 minutes. Remove fish from skillet. Keep warm. Reduce heat to medium.

Stir wine into skillet, scraping bottom to loosen browned bits. Add remaining 1 tablespoon butter and green onion. Cook and stir 1 minute. Gradually stir in cream.

Stir in mustard and remaining 1/2 teaspoon OLD BAY. Simmer 2 minutes or until slightly thickened. Stir in crabmeat. Return fish to skillet. Cover. Cook 3 minutes longer or until fish flakes easily with a fork.

Tips
Rockfish Substitutes: red snapper, striped bass, halibut, tilapia or cod

Chocolate Cheesecake Pie
(adapted from The Frugal Girl)

Crust
1 1/2 cups graham cracker crumbs
6 tablespoons melted butter
(or 1 pre-made graham cracker crust)

Filling
1 15 oz container cottage cheese (fat-free, light, or regular)
1 cup sugar
1/2 cup unsweetened cocoa powder
1 8 oz. package cream cheese (fat-free, light, or regular)
1 egg or 2 egg whites
1/3 cup milk
2 teaspoons vanilla

Combine graham cracker crumbs and butter, and press into a 9-inch pie pan. Set aside.

In a food processor, blend cottage cheese until smooth. Add sugar, cocoa powder, and cream cheese; process until smooth. Add egg, milk, and vanilla, and process just until blended.

Pour filling mixture into crust and bake in a preheated 350 F oven for 45-55 minutes, or until the edges are firm (center will be soft). Turn oven off and let cheesecake stand in oven for 30 minutes with the oven door cracked open at least 4 inches.

Remove cheesecake from oven; cool to room temperature on wire rack. Cover and refrigerate for at least 4 hours before serving.

Blender directions: Puree cottage in a blender in two batches, adding half of the milk with each batch. Transfer the smooth ricotta to a mixer bowl and proceed with the recipe, using a standard mixer.

Egg Nog Coffee Cake

1 - cup granulated sugar
1/2 - cup butter, softened
1 - cup eggnog
1 - 8 oz container sour cream
1 - teaspoon rum or butter extract
2 - eggs
2 1/2 - cups all-purpose flour
1 1/2 - teaspoons baking powder
1/2 - teaspoon baking soda
1/2 - teaspoon salt

Struesel Topping:
1/3 - cup granulated sugar
1 - tablespoon all-purpose flour
1 - tablespoon butter, softened
1/4 - teaspoon ground nutmeg
1/4 - teaspoon cinnamon

Grease bottom only of rectangular pan, 13x9x2 inches, with shortening. In small bowl, mix all Streusel Topping ingredients with fork until crumbly; set aside.

In large bowl, beat 1 cup granulated sugar and 1/2 cup butter with electric mixer on medium speed, or mix with spoon. Beat in 1 cup eggnog, the sour cream, rum or butter extract and eggs until blended. Stir in 2 1/2 cups flour, the baking powder, baking soda and salt. Spread in pan.

Sprinkle Streusel Topping over batter. Cover and refrigerate at least 8 hours. Heat oven to 350°F. Uncover pan; bake 35 to 40 minutes or until toothpick inserted in center comes out clean. Cool 20 minutes and then drizzle with the egg nog glaze.

Egg Nog Glaze:
1/2 - cup powdered sugar
1-2 - tablespoon Egg Nog

In small bowl, mix all Eggnog Glaze ingredients until smooth and thin enough to drizzle. Drizzle over coffee cake. (I doubled the glaze recipe).

Eggnog Muffins
Adapted from Better Homes & Gardens

2 1/4 cups flour (plus 2 Tbls)
1 cup sugar (minus 1 tsp)
2 tsp baking powder (minus 1/2 tsp)
1/2 tsp ground nutmeg (I used freshly grated)
2 eggs
1 cup eggnog (plus 1/4 cup)
1/2 cup butter, melted and cooled
1 tsp vanilla

Preheat oven to 375 degrees. Prepare 12 cup muffin pan.
Combine flour, sugar, baking powder and nutmeg. Set aside. In another bowl combine eggs, eggnog, butter and vanilla. Combine wet and dry ingredients, and stir until just combined. Scoop into prepared muffin pan, fill about 3/4 full.
Bake for 15-18 minutes. Cool on wire rack for a few minutes, then remove from pan.

Go grocery & drugstore shopping
Wipe down kitchen cabinets & pantry
Wipe down cabinet & pantry shelves
Vacuum
Disinfect light switches & door knobs
Clean mirrors, tv & computer screens

This month - Master Bedroom:
Clean out dressers and closets. Get rid of outgrown and unused clothing.
Clean baseboards.
Wash window treatments.
Clean windows.
Clean doors including door knobs, molding, and trim.
Spot clean walls of any marks, scuffs, or handprints.
Sweep ceilings for any dust or cobwebs.

Breakfast:
French toast

Lunch:
Grilled cheese
Tomato soup

Dinner:
Beef chop suey
Rice
Leftover cappuccino pudding

Breakfast: Eggnog scone with butter & applesauce
Lunch: Salad with hardboiled egg & cheese
Dinner: Beef roast, carrots, baked potato & chocolate delight

Tuesday:
Breakfast: French toast
Lunch: Grilled cheese & tomato soup
Dinner: Chinese beef chop suey, jasmine rice & leftover chocolate delight

Wednesday:
Breakfast: Cereal
Lunch: Salad or a pb & j
Dinner: Beef enchilada casserole & bread

Thursday:
Breakfast: Eggs & toast
Lunch: Grilled cheese with tomato slices
Dinner: Spinach quiche, hash brown potatoes & leftover bread

Friday:
Breakfast: Bagel with cream cheese
Lunch: Leftover quiche
Dinner: Crab newburg over old bay pasta & leftover bread with ice cream

Saturday:
Breakfast: Just middles
Lunch: Leftover crab newburg over pasta
Dinner: Take out & cake

Sunday:
Breakfast: Omelet & toast
Lunch: Big whip
Dinner: Pizza pasta, garlic bread, salad & leftover cake
