Homemade Nutri-Grain Bars



1 c butter softened
1 c brown sugar
1 c whole wheat flour
1 c all purpose flour
1 1/2 cups oats
1 tsp almond extract

2 c (16-24 oz jar) jelly or jam

MIX ingredients together until they form a coarse meal – I mixed mine together with my hands

press one half of the mixture into a foil lined, sprayed 9 X 13 pan

spread jelly over the crust

crumble the remaining mixture over the top and press down onto the jelly lightly

bake at 350 for 20-25 minutes

allow to cool before cutting into bars

Homemade English Muffins

1 3/4 cups (14 ounces) milk, warm
3 tablespoons butter
1 1/4 teaspoons salt
2 tablespoons turbinado sugar
1 large egg, lightly beaten
4 to 4 1/4 cups flour {I used whole wheat}
2 teaspoons instant yeast
1 tsp baking powder

Combine the warm milk, sugar and yeast, allowing the yeast to proof for a few minutes, until bubbly. Add remaining ingredients and mix thoroughly, for about 5 minutes. Do not add more flour, the dough will be very sticky. Once mixed, scrape dough from bowl onto a lightly floured counter top. Fold dough over a few times, until you make a nice, smooth ball. Place in a greased bowl and allow to rise in a warm place for about 1 hour.

Punch down dough and lay out on a surface sprinkled with corn meal. Roll out to desired thickness. the muffins rise somewhat, so roll them out about 1/4" thinner than what you would like the final product to be. Cut out circles with a floured 3-inch cutter. Re-roll and cut out the leftover dough. Cover the muffins with a damp cloth and let rest for about 20 minutes.


Heat a frying pan or griddle to very low heat. Do not grease, but sprinkle with cornmeal. Cover pan and cook for 6-7 minutes on each side. I grab my book and a chair, and get comfortable, setting the timer to keep track of the muffins.

Cool on a cooling rack. Store muffins in the fridge or freezer.

Creamy Italian Dressing

Ingredients

How to make it

  • Combine mayonnaise, sour cream and buttermilk in large bowl and mix with wire whip.
  • Add remaining ingredients and refrigerate a few hours before serving.
  • Serve over your favorite green salad or use as a dip for vegetables.

Cheese bean and rice burrito

Number of Servings: 8

Ingredients
    2 cups fat free refried beans
    8, 8" flour tortillas
    1 cup white rice
    .75 cup shredded cheddar cheese
 
Directions
Preheat oven to 350 degrees. Heat refried beans on in microwave. Make 1 cup of rice. Mix refried beans and rice together. Microwave tortillas for 30 seconds to soften. Spray 9" square baking pan with nonstick cooking spray. Spread .25 cup refried beans/rice down center of each tortilla. Sprinkle cheese into each tortilla. Wrap torillas burrito style and place seam side down in pan. Sprinkle .5 cup cheese evenly over burritos. Bake at 350 degrees for 15 minutes. 1 serving=1 burrito

Refried Bean Dip

Serving Size / Yield
4-6 servings
 
Ingredients
  • 1 1/2 - 2 blocks cream cheese, softened (fat free or reduced fat)
  • 1 can refried beans
  • 4 oz. shredded cheese (any mix you like)

Directions

Spray glass pie plate with cooking spray. Add cream cheese and spread to cover bottom of plate. Top with beans and then shredded cheese. Place in preheated oven and bake at 325 until cheese starts to melt. Broil on low about 4 minutes to bubble up cheese. Serve with tortilla chips (something hearty that won't break) or crackers.

Natural Marinara Sauce:

  • 1 Tbsp olive oil
  • 2 garlic cloves, finely chopped
  • 1/2 onion, diced
  • 1 medium tomato, diced
  • Opened bottle of hearty red wine, such as burgundy, though any red wine will work
  • 2 16oz cans of Crushed Tomatoes (For extra chunky sauce, substitute 1 lb fresh diced tomatoes for one of the cans of crushed tomatoes. For a thinner sauce, substitute 1 16oz can of tomato sauce for one of the cans of crushed tomatoes.)
  • 1 teaspoon Basil
  • 1/2 teaspoon Red Pepper Flakes
  • Salt as needed
  • Oregano or other Italian Seasoning to taste
  • Shredded spinach (optional)
  • Parmesan cheese (optional)

Directions:

  1. Put olive oil in large skillet and let skillet heat up on medium heat.
  2. Sauté onions and garlic until they turn brown around the edges.
  3. Add a little red wine until onions and garlic are barely covered. Let garlic and onions soak in all the wine.
  4. Add diced, fresh tomatoes and stir until tomatoes are covered in wine and onion mixture. Let skillet simmer for about thirty seconds and stir as needed.
  5. Carefully add desired combination of crushed tomatoes and tomatoes for extra chunky or thinner sauce if applicable. Stir tomatoes into wine and vegetable mixture until uniformly mixed. Add shredded spinach, if using.
  6. Turn heat down to low and cover skillet. Allow sauce to simmer for at least five minutes, stirring occasionally to make sure the sauce is not sticking to pan. Season with salt and Italian seasonings to taste.

Frozen Strawberry Yogurt
 
1/2 c. cream
1 1/2 c. mashed strawberries
1/2 c. sugar
1 1/4 c. plain yogurt
Mix together and pour into an electric ice cream machine. Let it mix together until frozen.
Banana Bread

3/4 cup organic cane sugar or sucanat
1/2 cup butter, room temp
2 eggs
2 cups whole wheat flour
5 Tbsp. sour milk (4 Tbsp. milk + 1 Tbsp. vinegar) or buttermilk
1 cup mashed banana (the riper the better)
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt


Cream sugar, butter and eggs. Add remaining ingredients and mix well. Put in two 9" buttered loaf pans. Bake @ 350 degress for 35-45 min.
