Creamy Ranch Chicken

Creamy Ranch Chicken with Garlic Mashed Potatoes
Time: 20 min. prep + 4-6 hours crock pot cooking
Yield: 6 servings

Creamy Ranch Chicken:
5-6 chicken breasts (I used frozen)
2 (14 ounce) cans cream of chicken soup
4 T butter, melted
2 (1 ounce) packages Hidden Valley Ranch Salad Dressing Mix
4-5 cloves garlic

Roasted Garlic Mashed Potatoes:
7 large russet potatoes
4 T butter
milk
salt and pepper

1. Find yourself a nice crock pot. Spray the inside with cooking spray and place 5-6 chicken breasts in it. (I used frozen)
2. In a small bowl combine 2 cans cream of chicken soup, 2 packages ranch mix and 4 tablespoons melted butter. Spread it over the top of your chicken.
3. Peel your garlic and place the cloves on top of a sheet of tin foil.
4. Wrap the foil around the cloves and up into a nice little package.
5. Place the garlic package in the crock pot on top of the chicken. Cover the crock and let the old girl cook away on low for 6 hours, or on high for 4 hours.
6. When your chicken has cooked through carefully take the tin foil package out of the crock pot and set it on a plate.
7. Peel your potatoes and chop them into chunks. Boil them for about 15 minutes, or until fork tender and then drain the water out of the pan.
8. Mash up some of the roasted garlic and add it to the potatoes. Just start with a small amount of garlic, maybe 1-2 teaspoons. You can always add more, if you want it really garlicky...but you don't want to overpower it.
9. Add 4 tablespoons of butter, salt and pepper and a bit of milk. Beat the potatoes until light and fluffy, tasting along the way and adding more salt and pepper or butter or milk or garlic to your own very personal liking and desire.

Serve the potatoes with the gravy from the crock pot and the heavenly Creamy Ranch Chicken.

Pumpkin Latte Coffee Cake

Pumpkin Latte Coffee Cake
 
Ingredients
  • 5 eggs
  • 2 teaspoons instant coffee granules
  • 1 8-ounce package cream cheese, softened
  • 2/3 cup sugar
  • 2 tablespoons flour
  • 1 teaspoon vanilla
  • 3 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 1 1/2 cups sugar
  • 2/3 cup canned pumpkin
  • 1 cup buttermilk or sour milk
  • For the streusel:
  • 1/2 cup packed brown sugar
  • 1/3 cup rolled oats
  • 1/4 cup flour
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 cup butter
  • For the drizzle:
  • 1 1/4 cups powdered sugar
  • 1 to 2 tablespoons cool, strong coffee
Instructions
  1. Preheat oven to 350. Grease a 9x13 baking pan and set aside.
  2. In a small bowl, stir together 2 eggs and the instant coffee. In a medium blow, beat cream cheese on medium speed with an electric mixture until fluffy. Beat in the 2/3 cup sugar, 2 tablespoons flour, and the vanilla until smooth. Beat in the egg/coffee mixture and set aside.
  3. In a medium bowl, stir together 3 cups flour, baking powder, pumpkin pie spice, baking soda and salt. Set aside.
  4. In a large bowl, beat butter on medium speed for about 30 seconds. Add the 1 1/2 cups sugar gradually, beating until fluffy. Add the remaining three eggs one at a time, beating well after each addition. Beat in pumpkin. Alternately add flour mixture and buttermilk to the pumpkin mixture, beating well to combine. Spread half of the batter into prepared pan. Spoon half of the cream cheese mixture on toop. Repeat. With a knife, swirl batter to marble. Sprinkle with struesel.
  5. Bake for 45 to 50 minutes, or until a toothpick inserted in the middle comes out clean.
  6. For the Streusel:
  7. Combine all dry ingredients; cut in butter with a pastry blender until crumbly.
  8. For the Drizzle:
  9. In a small bowl, stir together powdered sugar and coffee to make a drizzling consistency.

Chocolate Cream Pie

 
Chocolate Cream Pie
Yield: 8 to 10 servings
Prep Time: 5 hours | Bake Time: 10 minutes

For the Crust:
24 Oreo cookies, crushed into crumbs
3 tablespoons butter, melted and cooled

For the Chocolate Cream Filling:
2½ cups half-and-half
Pinch salt
1/3 cup granulated sugar, divided
2 tablespoons cornstarch
6 egg yolks, at room temperature
6 tablespoons unsalted butter, cold and cut into 6 pieces
6 ounces semisweet or bittersweet chocolate, finely chopped
1 ounce unsweetened chocolate, finely chopped
1 teaspoon vanilla extract

For the Whipped Cream Topping:
1½ cups heavy cream
4½ teaspoons granulated sugar
½ teaspoon vanilla extract

1. Make the Crust: Preheat oven to 350 degrees F. Combine the Oreo cookie crumbs and the melted butter in a medium bowl and toss with a fork until the crumbs are evenly moistened. Transfer the crumbs to a 9-inch pie plate. Press the crumbs evenly into the bottom and up the sides of the pan, forming a crust. Refrigerate the lined pie plate for 20 minutes. Bake for 10 minutes, until the crust is fragrant and set. Cook on a wire rack while the filling is prepared.

2. Make the Chocolate Cream Filling: Bring the half-and-half, salt and 3 tablespoons of the sugar to a simmer in a medium saucepan over medium-high heat, stirring occasionally with a wooden spoon to dissolve the sugar. Stir together the remaining sugar and cornstarch in a small bowl. Whisk the yolks thoroughly in a medium bowl for about 30 seconds, until slightly thickened. Add the cornstarch mixture and whisk until the mixture is glossy and the sugar has begun to dissolve, about 1 minute. When the half-and-half reaches a full simmer, drizzle about ½ cup hot half-and-half over the yolks, whisking constantly to temper; then whisk the egg yolk mixture into the simmering half-and-half. Return to a simmer, whisking constantly, until 3 or 4 bubbles burst on the surface and mixture is thickened and glossy, about 15 seconds longer. 
3. Off the heat, whisk in the butter until incorporated; add the chopped chocolate and whisk until melted, scraping the bottom of the pan with a rubber spatula to fully incorporate. Stir in the vanilla, then immediately pour the filling through a fine-mesh sieve set over a bowl. Using a spatula, scrape the strained filling into the baked and cooled crust. Press plastic wrap directly on the surface of the filling and refrigerate the pie until the filling is cold and firm, at least 4 hours or overnight.

4. Make the Whipped Cream Topping: When ready to serve, beat the cream and sugar in the chilled bowl of an eelctric mixer at medium speed to soft peaks; add the vanilla. Continue to beat to barely stiff peaks. Spread or pipe the whipped cream over the chilled filling and garnish with shaved chocolate, if desired. Serve immediately.

Pumpkin Scones with Spiced Glaze

These are the best pumpkin scones I have ever had!! I found this recipe over at Brown Eyed Baker
Pumpkin Scones with Spiced Glaze
Yield: 12 scones

For the Scones:
2 cups all-purpose flour
7 Tablespoons granulated sugar
1 Tablespoon baking powder
½ teaspoon salt
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon ground cloves
¼ teaspoon ground ginger
6 Tablespoons cold butter
½ cup canned pumpkin
3 Tablespoons half-and-half
1 large egg

For the Powdered Sugar Glaze:
1 cup plus 1 Tablespoon powdered sugar
2 Tabelspoons milk

For the Spiced Glaze:
1 cup plus 3 Tablespoons powdered sugar
2 Tablespoons milk
¼ teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 pinch ground ginger
1 pinch ground cloves

1. Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper; set aside.

2. Combine flour, sugar, baking powder, salt, cinnamon, nutmeg, cloves and ginger in a large bowl. Use a fork to cut the butter into the dry ingredients until mixture is crumbly and no chunks of butter are obvious; set aside.

3. In a separate bowl, whisk together the pumpkin, half-and-half and egg. Fold wet ingredients into dry ingredients, and form the dough into a ball. Pat out dough onto a lightly floured surface and form it into a 1-inch thick rectangle about 3 times as long as wide. Use a large knife or a pizza cutter to slice the dough twice through the width, making three equal portions. Cut each of the portions in an X pattern (four pieces) so you end up with 12 triangular slices of dough. Place on prepared baking sheet. Bake for 14-16 minutes, or until light brown. Place on wire rack to cool.

4. To make the powdered sugar glaze, mix the powdered sugar and milk together until smooth. When scones are cool, use a brush to spread plain glaze over the top of each scone.

5. To make the spiced glaze, while the powdered sugar glaze is firming, combine all of the ingredients for the spiced glaze. Drizzle over each scone and allow the icing to dry before serving (about an hour).

Cheesy Garlic Bread

Easy Garlic Cheese Bread
Time: 20 minutes
Yield: Serves 7-8 fine folks
Recipe from Jamie Cooks It Up!

1 loaf French Bread 1/2 C butter (one stick) softened1 1/2 T Johnny's Garlic Seasoning 
1 C mozzarella cheese, grated1/2 C Parmesan cheese, grated
1 T dried parsley

1. Slice your french bread in half.
2. Combine the butter and the Johnny's Garlic Seasoning.
3. Spread the butter on the inside of each half of bread.
4. Wrap the bread in tin foil.
5. Bake for 10 minutes at 400 degrees.
6. Take the bread out of the oven and sprinkle with the cheese. Wrap just the sides of the bread now with foil. Leave the cheese out in the open.
7. Put the pan back in the oven and turn in to broil. Broil just until the cheese starts to brown.
8. Sprinkle with parsley, cut and serve.

Note: I used garlic salt instead of the garlic seasoning and found the bread to be a bit too salty. Next time I make this I will use 1 TB of garlic salt & 1/2 TB of garlic powder.

Muffins
1 cup Fiber One Original bran cereal
1 1/2 cups whole-wheat flour
1/2 cup Splenda No Calorie Sweetener (granulated)
1/4 cup brown sugar (not packed)
1 tbsp. baking powder
2 tsp. cinnamon
1/2 tsp. pumpkin pie spice
1/4 tsp. salt
One 15-oz. can pure pumpkin
1 cup club soda
1/2 cup fat-free liquid egg substitute (like Egg Beaters Original)
1/4 cup sugar-free pancake syrup
1 tsp. vanilla extract
1/4 cup raisins, chopped

Icing
1/4 cup Cool Whip Free, thawed
3 tbsp. fat-free cream cheese, room temperature
1 tbsp. Splenda No Calorie Sweetener (granulated)

Directions:
Preheat oven to 350 degrees. Line 10 cups of a 12-cup muffin pan with baking cups and/or spray with nonstick spray. Set aside.

Using a blender or food processor, grind cereal to a breadcrumb-like consistency. Transfer crumbs to a large bowl.
 Add flour, Splenda, brown sugar, baking powder, cinnamon, pumpkin pie spice, and salt. Mix well and set aside.

In another bowl, combine pumpkin, soda, egg substitute, syrup, and vanilla extract. Mix thoroughly. Add mixture to the large bowl and stir until blended to form the batter.

Slowly sprinkle and stir chopped raisins into the batter. Evenly distribute batter among the 10 prepared cups of your muffin pan. (Batter may be piled high... This is OK!)

Bake in the oven until muffins are golden brown and a toothpick inserted into the center of one comes out mostly clean, about 30 minutes. Set aside to cool.

Meanwhile, combine all icing ingredients in a small microwave-safe bowl. Mix until smooth and blended. (Refrigerate icing if you don't plan to serve muffins right away.)

Remove cooled muffins from the pan. Just before serving, warm icing in the microwave for a few seconds and drizzle it onto the muffins (or simply spread it on evenly). Enjoy!

Orange Chicken

Orange Chicken
(I got this recipe from the Hungry Girl website)

Ingredients:
1/4 cup whole-wheat flour
10 oz. raw boneless skinless chicken breast, cut into bite-sized pieces
1/8 tsp. each salt and black pepper
1/4 cup fat-free liquid egg substitute (like Egg Beaters Original)
1/4 cup fat-free chicken broth
1 tbsp. cornstarch
1 1/2 tbsp. low-sugar orange marmalade
1 1/2 tbsp. seasoned rice vinegar
1 tbsp. Splenda No Calorie Sweetener (granulated)
1 tbsp. reduced-sodium/lite soy sauce
1 tsp. chopped garlic
1 tsp. chopped ginger
Dash red pepper flakes
2 tbsp. chopped scallions

Directions:
Preheat oven to 375 degrees. Spray a baking sheet with nonstick spray.

Place flour in a wide bowl.

Place chicken in a large bowl and season with salt and pepper. Top with egg substitute and toss to coat.

One at a time, shake chicken pieces to remove excess egg and coat with flour. Evenly lay chicken pieces on the baking sheet.

Bake for 10 minutes, or until chicken is cooked through.

In a medium bowl, whisk broth with cornstarch until cornstarch has dissolved. Add marmalade, vinegar, sweetener, and soy sauce, and thoroughly whisk.

Bring a skillet sprayed with nonstick spray to medium heat. Cook and stir garlic and ginger until slightly softened and fragrant, about 1 minute. Add broth mixture and red pepper flakes. Cook and stir until well mixed and slightly thickened, 1 to 2 minutes.

Remove skillet from heat, add chicken, and toss to coat. Serve topped with scallions and enjoy!

Parmesan Potato Wedges

  • 4 Russet Potatoes
  • 2 Tablespoons olive oil or melted butter
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 1/2 teaspoons paprika
  • 1 teaspoon salt
  • 2 Tablespoons parsley
  • A couple dashes of cayenne pepper
Preheat the oven to 450 degrees and line a baking sheet with aluminum foil. Be sure to spray the foil with non-stick spray.
Combine Parmesan cheese, garlic powder, paprika, salt, parsley and cayenne pepper in a small bowl.
Cut potatoes in half the long way. Then place each half flat on a cutting board and slice wedges. Place the potato wedges in a large bowl and toss with olive oil or butter to completely coat. Add the cheese mixture to the potato wedges and toss gently to coat evenly.
Place potatoes on the baking sheet. Sprinkle with leftover cheese mixture. Bake for 25-35 minutes or until potatoes are easily pierced with a fork. The smaller wedges will be done sooner. I found it easy to turn the potatoes with tongs about halfway through the baking time…and I might have sprinkled more cheese mixture on when I turned them.

Pumpkin Spice Creamer

Pumpkin Spice Creamer
 
Ingredients
  • 1 cup milk
  • 1 cup half and half
  • 4 to 5 heaping tablespoons canned pumpkin (not pumpkin pie filling)
  • 4 tablespoons maple syrup
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla extract or maple extract, optional
Instructions
  1. In a saucepan, whisk together milk, half-and-half, pumpking, syrup, and spices over medium heat. When the liquid begins to get steamy, remove from heat and stir in extract, if using.
  2. Transfer the mixture to a jar or other container using a strainer, and allow to cool in the refrigerator.

Baked Pumpkin Spice Doughnuts

Baked Pumpkin Spice Doughnuts

Ingredients
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
2 teaspoons pumpkin pie spice
1/2 cup brown sugar
1 cup pumpkin puree
2 eggs
2 tablespoons milk
1/4 cup butter, at room temperature
1 teaspoon vanilla extract

For Coating:
1/4 cup butter, melted
1/2 cup sugar
1-2 tablespoons cinnamon

Preheat the oven to 350 degrees. Prepare a doughnut pan by spraying with non-stick cooking spray. In a large bowl, sift together the flour, baking powder, salt, baking soda, and pumpkin pie spice. Set aside. In another bowl, cream together the brown sugar, butter and pumpkin. Add in the eggs, mix well, then mix in the vanilla and milk. Stir in the reserved dry ingredients.
Place the mix in a large zip-top bag. Cut off the corner and pipe into the doughnut pan.
Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 10 minutes. Remove pan from oven, let rest for 5 minutes, then remove from pan and allow to cool completely on a wire rack.

While the donuts are cooling, melt butter in one bowl and combine the sugar and cinnamon in another. When donuts are still hot (but not too hot to touch), quickly dip each donut in melted butter, then coat in the cinnamon-sugar mixture. Serve immediately.

Five Chip Cookies

Five Chip Cookies

1 - cup butter, softened

1 - cup peanut butter
1 - cup sugar
2/3 - cup packed brown sugar
2 - eggs
1 - teaspoon vanilla extract
2 - cups all-purpose flour
1 - cup old-fashioned oats
2 - teaspoons baking soda
1/2 - teaspoon salt
2/3 - cup each milk chocolate chips, semisweet chocolate chips, peanut butter chips, white chocolate and butterscotch chips

In a large bowl, cream the butter, peanut butter and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, oats, baking soda and salt; gradually add to the creamed mixture and mix well. Stir in chips.

Drop by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 350° for 9- 10 minutes or until lightly browned. Cool for 1 minute before removing to wire racks. Yield: 4-1/2 dozen.

Individual Chocolate Peanut Butter Trifles

  • 4 cups BROWNIES, chopped
  • 2 cups MINIATURE PEANUT BUTTER CUPS, chopped + 12 halves for topping
  • 1/2 cup PEANUT BUTTER CHIPS
  • 2 1/2 cups cold MILK
  • 2 small packages INSTANT VANILLA PUDDING MIX
  • 3 teaspoons VANILLA
  • 1/2 cup CREAMY PEANUT BUTTER
  • 12 ounces COOL WHIP, thawed
  •  
    Instructions
    In a large bowl, whisk milk and pudding mixes for 2 minutes (mixture will be thick). Add peanut butter and vanilla; mix well. Fold in 8 ounces of cool whip.

    Using 12- 6oz jelly jars, begin layering with brownies, then peanut butter cups, a few peanut butter chips, and pudding. Repeat layers ending with brownies, peanut butter cups, chips or any combination of those. Top with remaining whipped topping; garnish with reserved peanut butter cup halves. Refrigerate until chilled.

    (8 servings)   
    • 1 cup of all-purpose flour
    • 1/2 cup of whole wheat flour
    • 3/4 cup fat free milk
    • 1/2 cup raisins
    • 1/4 cup sugar (or sugar substitute)
    • 1 large egg (or 1/4 cup egg beaters)
    • 6 additional Tablespoons sugar (or sugar substitute)
    • 3 Tablespoons light butter - melted
    • 2 teaspoons baking powder
    • 1 teaspoon cinnamon
    • 1/2 teaspoon salt
    • 1/2 teaspoon allspice
     
    Preheat oven to 350 degrees.

    In a large bowl, sift together flour, salt, 6 Tablespoons of sugar, baking powder and allspice. Now, add the milk, egg and butter. Mix well, stirring in the raisins as you do so.

    Turn into a greased and floured 8-inch layer cake pan.

    Mix together 1/4 cup of sugar and cinnamon. Sprinkle over the top of the cake.

    Bake for 25 to 30 minutes or until it passes the toothpick test.

    Creamy Macaroni and Cheese

    Creamy Baked Macaroni and Cheese
    Time: 20 minutes prep + 40 minutes baking
    Yield: 7 servings
    Recipe adapted from Jamie Cooks It Up!
    2 1/2 C elbow macaroni
    1/2 C light butter (one stick)
    1/2 C flour
    1/4 t salt
    dash pepper
    2 1/3 C simply smart fat free milk
    1/2 C chicken broth
    3 1/4 C reduced fat cheddar cheese
    4 ounces Philadelphia light Cream Cheese (half a brick)
     

    1. Measure out your elbow macaroni. Bring a medium sized pot of water to a boil. Add 1 t salt and your elbow mac. Reduce the heat and cook until the pasta is al dente.
    ***NOTE*** You want the pasta to be firm in the center when you stop cooking it. Otherwise you will get a pretty soggy mac and cheese.
     
    2. Place your Philadelphia Cream Cheese (just half of the brick now) in a small bowl. Pop it in the microwave for 30 seconds. Stir it around to make it nice and smooth. 

    3. In a large, deep skillet melt your butter over medium heat.
    4. Add the flour. Whisk the mixture around until it is nice and smooth and thick. 
    5. Pour in your milk…keep whisking.
    6. Add the broth and continue to whisk the sauce.
    7. In just 2 or 3 short minutes of whisking you will get a thick sauce. Lovely!
    8. Add 2 1/2 C of the cheddar cheese and the warm Philadelphia Cream Cheese. Whisk it in and keep on a stirring it around. The cheeses will melt after about 3 minutes.
    9. Add the elbow mac to the sauce. Stir to combine. Then pour it into a 9 x 9 baking pan that has been sprayed with cooking spray.
    11. Sprinkle the remaining 3/4 C of cheddar cheese over the creamy, saucy mac.
    12. Bake at 350 degrees (uncovered) for 40 minutes, or until the top is golden brown.
