Raisin Coffee Cake

Raisin Coffee Cake
(8 servings)   
  • 1 cup of all-purpose flour
  • 1/2 cup of whole wheat flour
  • 3/4 cup fat free milk
  • 1/2 cup raisins
  • 1/4 cup sugar (or sugar substitute)
  • 1 large egg (or 1/4 cup egg beaters)
  • 6 additional Tablespoons sugar (or sugar substitute)
  • 3 Tablespoons light butter - melted
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon allspice
 
Preheat oven to 350 degrees.

In a large bowl, sift together flour, salt, 6 Tablespoons of sugar, baking powder and allspice. Now, add the milk, egg and butter. Mix well, stirring in the raisins as you do so.

Turn into a greased and floured 8-inch layer cake pan.

Mix together 1/4 cup of sugar and cinnamon. Sprinkle over the top of the cake.

Bake for 25 to 30 minutes or until it passes the toothpick test.
