Buffalo Chicken Loaded Sweet Potato Fries Ingredients: 1 1/2 lbs Sweet potatoes 1 lb Chicken breast 4-6 servings buffalo sauce of choice 2 diced tomatoes 4 ozs shredded cheese of choice 1 TBS olive or avocado oil For the ranch sauce: 1/4 cup plain nonfat Greek yogurt 1/4 cup low fat milk Ranch seasoning to taste Optional topping: scallions 1. Start by cooking your chicken breast in a crockpot with water on high for 3-4 hours, or low 6-8 hours until internal temp 165 deg F. If you prefer to save time, you can use precooked  or rotisserie chicken. 2. Put your sweet potato fries on a baking sheet, drizzle with oil and lightly season with salt. Cook in oven according to package directions. 3. Once chicken is fully cooked, add to a bowl and shred, next add in your buffalo sauce to taste and mix 4. In a small bowl, add Greek yogurt, milk and ranch seasoning. Mix 5. In your bowls, add sweet potato fries, buffalo chicken and shredded cheese. Add diced tomatoes and shredded cheese on top....
