Creamy Turkey Vegetable Soup

CREAMY TURKEY-VEGETABLE SOUP
.
This is a great, satisfying soup, perfect for a chilly night. This also makes the best of leftover turkey! Chicken can be substituted for the turkey for an equally delicious soup.
.
1 small onion, diced
2 tbsp. butter
2 cups water
2 chicken bouillon cubes
2 cups diced cooked turkey
1/2 cup chopped celery
1-1/2 cups diced potatoes
1 cup diced carrots
2-1/2 cups milk
2 tbsp. flour
1 tsp. salt
1/2 tsp. pepper
.
1. Saute onion in butter until translucent. Add water, bouillon cubes, turkey and vegetables. Cover and boil gently until vegetables are tender.
2. Add a small amount of milk to the flour, stirring until mixture is smooth. Add remaining milk, salt and pepper.
3. Stir milk mixture into soup. Simmer, stirring occasionally, until soup thickens slightly. Remove from heat and serve. Yield: 4-6 servings.

Turkey Tetrazzini


TURKEY TETRAZZINI
.
.
1 package (7 ounces) spaghetti
2 cups turkey or chicken broth
2 cups half and half or milk
1/2 cup flour
1/4 cup butter
1/2 tsp. salt
1/4 tsp. pepper
1 tsp. chicken bouillon granules
1/2 cup grated Parmesan cheese
1 cup shredded Cheddar cheese, divided
2 cups cooked, cubed turkey
3/4 cup frozen peas and carrots
1/4 cup sliced almonds
.
1. Cook spaghetti as directed on package. Rinse with cold water and drain; set aside.
2. Preheat oven to 350ยบ.
3. Mix broth, half and half, flour, butter, salt, pepper and chicken bouillon granules in a 3-quart saucepan. Heat to a boiling over medium heat, stirring constantly. Boil and stir 1 minute. Stir in Parmesan cheese and 1/2 cup Cheddar cheese.
4. Stir in spaghetti, turkey, peas and carrots and almonds. Spread in an ungreased 2-quart casserole dish. Sprinkle with remaining Cheddar cheese.
5. Bake, uncovered, 25 to 30 minutes or until hot and bubbly. Yield: 4-6 servings.

Southern Buttermilk Biscuits


Southern Buttermilk Biscuits

Ingredients
    • 2 cups unbleached all-purpose flour, plus more for dusting the board ( if you can get White Lily flour, your biscuits will be even better)
    • 1/4 teaspoon baking soda
    • 1 tablespoon baking powder ( use one without aluminum)
    • 1 teaspoon kosher salt or 1 teaspoon salt
    • 6 tablespoons unsalted butter, very cold
    • 1 cup buttermilk ( approx)

Directions

  1. Preheat your oven to 450°F.
  2. Combine the dry ingredients in a bowl, or in the bowl of a food processor.
  3. Cut the butter into chunks and cut into the flour until it resembles course meal.
  4. If using a food processor, just pulse a few times until this consistency is achieved.
  5. Add the buttermilk and mix JUST until combined.
  6. If it appears on the dry side, add a bit more buttermilk. It should be very wet.
  7. Turn the dough out onto a floured board.
  8. Gently, gently PAT (do NOT roll with a rolling pin) the dough out until it's about 1/2" thick. Fold the dough about 5 times, gently press the dough down to a 1 inch thick.
  9. Use a round cutter to cut into rounds.
  10. You can gently knead the scraps together and make a few more, but they will not be anywhere near as good as the first ones.
  11. Place the biscuits on a cookie sheet- if you like soft sides, put them touching each other.
  12. If you like"crusty" sides, put them about 1 inch apart- these will not rise as high as the biscuits put close together.
  13. Bake for about 10-12 minutes- the biscuits will be a beautiful light golden brown on top and bottom.
  14. Do not overbake.
  15. Note: The key to real biscuits is not in the ingredients, but in the handling of the dough.
  16. The dough must be handled as little as possible or you will have tough biscuits.
  17. I have found that a food processor produces superior biscuits, because the ingredients stay colder and there's less chance of overmixing.

    Chinese Roast Pork Buns

    List of Ingredients

    1/4 cup firmly packed brown sugar
    1/4 cup ketchup
    2 tbsp. soy sauce
    2 tbsp. hoisin sauce
    1 tbsp. water
    1 garlic clove, minced
    1-1/2 lbs. pork chops (1/2 inch thick)
    SAUCE
    1 tbsp. cornstarch
    1 tbsp. water
    1 tbsp. peanut or vegetable oil
    1/2 cup chopped onion
    1/2 cup chopped water chestnuts
    1 tbsp. soy sauce
    1 tbsp. hoisin sauce
    3 tbsp. brown sugar
    1/2 cup chicken broth
    1 can (17.3 ounces) Pillsbury Grands refrigerated biscuits (not butter flavor) or can use homemade, I use this recipe, Southern Buttermilk Biscuits
    GLAZE
    1 tsp. sugar
    1 tsp. water
    1 egg white



    Recipe

    1. Heat oven to 375ยบ. Line broiler pan with foil.

    2. In blender or food processor, combine 1/4 cup brown sugar, ketchup, 2 tbsp. soy sauce, 2 tbsp. hoisin sauce, 1 tbsp. water, and garlic; blend until smooth. Generously brush both sides of pork steaks, reserving remaining basting sauce. Place pork steaks on foil-lined broiler pan.

    3. Bake for 30 minutes. Remove pork from oven. Brush both sides of steaks with remaining basting sauce. Bake an additional 10 to 20 minutes or until tender. Remove from oven; cool. Remove meat from bone; finely chop. Set aside.

    4. In small bowl, combine cornstarch and 1 tbsp. water; blend well. Heat oil in wok or large skillet over high heat. Add onion and water chestnuts; cook and stir 2 to 3 minutes or until onion begins to brown. Add 1 tbsp. soy sauce, 1 tbsp. hoisin sauce and 3 tbsp. brown sugar; stir to coat. Add chicken broth. Stir in cornstarch mixture; cook and stir until mixture begins to thicken. Remove from heat; stir in pork.

    5. Separate dough into 8 biscuits. On lightly floured surface, press or roll each biscuit into 5-inch circles. Place about 1/3 cup pork mixture in center of each biscuit. Gathering up edges, twist and pinch to seal. Place, seam side down, on ungreased baking sheet. In small bowl, beat glaze ingredients until well blended; brush over buns.

    6. Bake at 375ยบ for 14 to 18 minutes or until golden brown. Yield: 8 buns.

I hope you had a good holiday. My laptop has been acting up. It didn't want to run yesterday until late in the day. I do have some catching up to do though. I have received a Torani box from SheSpeaks and another Cravebox just in the past few days!! I will get to those within the next few days.

For today though, I am just doing my normal daily routines and helping my husband if he needs me. He is replacing the ceiling in our master bathroom.

We are doing take out for dinner.

November Photo of the Day

OK, I'm going to try and catch up here. The 9th was "small".  I chose a small reminder of my favorite vacation to Cape Cod. We went over to Martha's Vineyard where I got this.


The 10th was can't (won't) live without and I do believe this picture is pretty self-explanatory!!!


Well, the next one is night so I will have to continue this later as it is still daytime. LOL

Ok, I'm back. The 11th is night. Here is a picture out my back door after dark.

The 13th is where you slept. Here is where I sleep every night. (I know my pillowcases don't match the comforter, lol I've been too lazy to put the pillow shams on)


The 14th is "man-made". I had to think about this one. I decided to take a picture of something my husband built for me. This is my shelving for stockpiling in the basement.

Broccoli Salad


Broccoli Salad


List of Ingredients

1 bunch broccoli (about four crowns)
3/4 c. raisins I like golden raisins
1/2 c. chopped red onion
1 tbs. sugar
2 tbs. vinegar (can use balsamic)
1 c. mayonnaise
10 bacon slices, cooked and crumbled
1 c. sunflower seeds (optional)


Recipe

Fry bacon slices and set aside. Cut broccoli into flowerets and tender stem pieces. Mix, sugar, vinegar, mayo . Add to broccoli, along with remaining ingredients. Refrigerate and serve chilled. I make the day before.

NOTE: these are my proportions, which I changed slightly from the recipe that was given to me. That one says 5 cups of broccoli, so I guess it would depend on the size of the bunch you have to start with. I use more raisins and onion than the original.

Cream Cheese Chicken Chili

Cream Cheese Chicken Chili

Ingredients:
1 can white beans
1 can corn, undrained
1 can Rotel, undrained
1 package ranch dressing mix
1 tsp cumin
1 Tbsp chili powder
1 tsp onion powder
1 8 oz package light cream cheese
2 chicken breasts

Directions:
Drain and rinse black beans. Place chicken at bottom of pot, then pour out whole can of corn (undrained), rotel, and black beans. Top with seasonings and ranch mix. Stir together. Place cream cheese on top. Cover with lid and cook on low for 6-8 hours. Stir cream cheese into chili. Use 2 forks to shred chicken. Stir together and serve.

No-Bake Cappuccino Pie
INGREDIENTS
  • 8 oz cream cheese, softened
  • 2/3 cup mocha cappuccino spread
  • 1 1/2 cups powdered sugar
  • 1 cup milk
  • 8 oz Cool Whip, thawed
  • 9" graham cracker crust
INSTRUCTIONS
  1. Beat the cream cheese and cappuccino spread together with electric mixer.
  2. Add powdered sugar and milk. Blend well.
  3. Fold in Cool Whip.
  4. Pour into graham cracker crust.
  5. Freeze until ready to serve.
Notes
If you want to use store bought graham cracker crusts, you might be able to get 2 pies from this recipe. Store bought crusts are quite a bit smaller than homemade.

We hate green peppers!!!!


Inside Out Stuffed Peppers

6 servings
311 calories per person


Ingredients:
1 lb. lean ground turkey
2 green peppers, coarsely chopped (left out as we hate green peppers)
3 cloves garlic, minced
Salt and pepper to taste
2 c cooked brown rice or even use a chicken or beef flavored rice mix for extra flavor
16 oz. jarred marinara sauce
1 c shredded low fat mozzarella cheese
1/4 c cream cheese cooking creme (any flavor you want, I used original)
1/4 c chopped basil

Instructions:
Preheat oven to 350 degrees. Brown meat, peppers, salt and pepper in a large skillet. Add in garlic during the last minute of cooking. Drain and add rice, sauce, 1/2 c mozzarella and cream cheese. Mix well and spoon into a 2 quart casserole dish. Sprinkle with 1/2 c mozzarella and bake 25 minutes.

Chicken Gnocchi Soup

Chicken Gnocchi Soup

Ingredients

  • 1 tablespoons extra virgin oil
  • 4 tablespoons butter
  • 4 tablespoons flour
  • 1 quart half and half
  • 1/2 cup celery, finely diced
  • 1 cup onion, finely diced
  • 2 minced garlic cloves
  • 2 - 14 ounce cans of chicken broth if you enjoy thick soup, use one can
  • 1 cup carrots, finely shredded
  • 1 cup chicken breasts, cooked and diced (you can use a rotisserie chicken)
  • 1 package gnocchi, cooked (you can find these in gourmet/pasta section of the grocery store - you may want to cut the gnocchi in half if it is large, or purchase the mini size if available)
  • 1 cup of fresh spinach coarsely chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon thyme
  • 1/2 teaspoon parsley
  • 1/4 teaspoon nutmeg (optional)

Instructions

Saute the onion, celery, and garlic in the butter and olive oil over medium heat until the onion becomes translucent. Add the flour and make a roux. Let the butter and flour mixture cook for about a minute before adding 1 quart of half and half.
Cook gnocchi according to package directions.
Into the roux, add in the carrots and chicken. Once the mixture becomes thick, add the chicken broth. Once the mixture thickens again, add the cooked gnocchi, spinach, and seasoning; simmer until soup is heated through. Before serving season to taste by adding additional salt.

Pancake Mix

HOMEMADE PANCAKE MIX


  • 2 cups whole wheat flour

  • 1 cup white flour

  • 4 tablespoons sugar

  • 4 teaspoons baking powder

  • 1 teaspoon baking soda

  • 1 teaspoon salt


Combine the ingredients in a mixing bowl and transfer to a quart canning jar or other appropriate jar with a tight fitting lid.

You should also add a label to the jar telling the recipient how to make the pancakes. I made a label with pretty thorough instructions for making pancakes because I didn’t know if a younger or older family member might be getting the gift in our exchange. The main instructions you want to give are to make the pancakes using 3/4 cup of the mix with a 1/2 cup of milk and 1 egg. Here’s the instructions I put on my label.

To Make Pancake Batter Combine:
3/4 cup Pancake Mix
1/2 Cup Milk
1 Egg
(More or less milk can be used to make a thicker or thinner batter)
Pour the batter onto a hot griddle or fry pan using about 1/8 cup to 1/4 cup per pancake. When bubbles start to form on top, flip the pancake and brown on the other side. Makes approximately 6 to 8 pancakes.
For a larger batch that makes approximately 12 to 14 pancakes, combine 1-1/2 cups of the mix, 1 cup milk, and 2 eggs.

Today's subject is reflection. Now, that could be more than one thing. So, for picture taking, I found it easiest to take a picture of my reflection in the mirror. I probably shouldn't have taken the easy way out but I am tired. LOL

Ingredients

  • 12 Reduced Fat Vanilla Wafers
  • 1 8oz package light cream cheese, at room temp
  • 3/4 cup vanilla non-fat Greek yogurt (I used fat free sour cream)
  • 1/4 cup sugar
  • 1/2 cup liquid egg substitute
  • 1 tbsp vanilla extract

Instructions

  1. Preheat oven to 350 degrees.
  2. Line muffin tins with 12 paper baking cups. Place a vanilla wafer in each one.
  3. In a medium mixing bowl beat cream cheese until fluffy. Add egg substitute, yogurt, and sugar. Beat until smooth and thoroughly combined.
  4. Fill each baking cup 2/3 full with cream cheese mixture.
  5. Bake in oven for 20 minutes. You may have to adjust the time a bit if they still come out too soft or runny. It will depend on the oven.
  6. Cool on a rack for about 15 minutes until mini cheesecakes reach room temperature, then chill in refrigerator for at least an hour.
  7. Right before serving, top with fresh fruit of your choice.

Cooking time: 20 minute(s)

PER SERVING: 90 calories; 3g fat; 9g carbohydrates; 5g protein; 0g fiber

California Halibut Bake

California Halibut Bake

Halibut is a very light, flaky fish that is easy to cook, although not always available at a decent price. This particular recipe works well with cod, haddock, catfish as well as halibut.

* 4 (6 ounce) halibut fillets (Fillets should be free of any skin, regardless of the type of fish used)
(I used tilapia)
*1/2 cup Sour Cream
* 1/3 cup mayonnaise
* 1/3 cup Parmesan Cheese, grated
* 1 tablespoon lemon pepper seasoning
* 1/8 tsp ground Chipotle Pepper (I use McCormicks)
* 3/4 cup bread crumbs

 Preheat the oven to 425 degrees F. Mix all ingredients, except bread crumbs, spread liberally over the halibut fillets in 9x13 dish.

Sprinkle with bread crumbs and bake 20-25 minutes (or until golden brown and fish flakes with a fork). The chipotle pepper doesn't make the fish spicy, but does really accentuate the flavors and should not be omitted!

Mashed Butternut Squash

  • 1 butternut squash, peeled and cubed
  • 2 Tbsp butter or margarine
  • 2 tsp brown sugar (more or less to taste)
  • salt and pepper to taste
  • dash fresh ground nutmeg (optional)
Boil squash cubes until tender, about 20 minutes. Drain. Mash as you would for potatoes, then add remaining ingredients. Serve hot.
This is a yummy nutritious side dish! Serves about 4 depending on the size of the squash and the appetites!
