Cheesy Italian Bread

Cheesy Italian Bread
2 loaves

1 package yeast (or 2 1/4 teaspoons)
1 1/4 cups warm water
2 tablespoons sugar
1/2 teaspoon salt
1 teaspoon garlic salt
1/2 cup grated Romano cheese
3 to 3 1/2 cups flour
cornmeal


In a large mixing bowl, dissolve yeast in water. Add the sugar, salt, garlic salt, cheese and 2 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. Punch dough down. Turn onto a lightly floured surface; divide in half. Shape each half into a 14 inch loaf. Place on a greased baking sheet that has been sprinkled with cornmeal. Cover and let rise until doubled, about 45 minutes. Brush loaves with water. Make three diagonal slashes about 1/2 inch deep with a very sharp knife in each loaf. Fill a 13x9x2 inch baking pan with 1 inch of hot water and place on the bottom oven rack. Bake loaves at 400° for 20-25 minutes. Remove to wire racks. Serve with your favorite Italian food!

Broccoli Cheddar Soup

Homemade Panera Bread Broccoli Cheddar Soup

  • 5 cups broccoli florets (if you have a little more or a little less that is fine)
  • 6 cups chicken broth
  • 1 1/2 cups milk or 1/2 & 1/2 (1/2 & 1/2 does taste better but I usually use milk)
  • 1/2 cup plus 2 tablespoons flour
  • 2 – 3 cups grated cheddar cheese
  • bacon, cooked and chopped (optional)
Steam broccoli until tender, about six minutes. Chop finely. I do mine in the food processor because we like it really chopped up and it is quicker. Set aside. In a large saucepan combine broth and milk. Slowly whisk in flour. Cook over med to med high heat stirring. Cook until it starts to thicken but not too thick. I usually do it until it just starts to boil. Add chopped broccoli. Reduce heat to med low. Continue to cook about 5 minutes. Add cheese stir until cheese melts. Serve. If using bacon sprinkle each bowl with a little.

Mini Pumpkin Swirl Cheesecakes

Mini pumpkin swirl cheesecake

Ingredients:
Crust:
7 graham cracker sheets
1/2 tsp. ground cinnamon
2 Tbsp sugar
4 Tbsp unsalted butter, melted

Cheesecake Mixture:
8 oz. fat free Cool Whip
1 (8 oz) package fat-free cream cheese
1/4 cup sugar (or 6 Splenda packets)
2 tsp. vanilla extract

Pumpkin Mixture:
1/3 cup pumpkin puree
1 tsp. ground cinnamon
1 tsp. ground nutmeg
1/2 tsp. ground ginger
1/8 tsp. allspice

In a food processor, grind up the graham cracker sheets into fine crumbs. {If you don’t have a food processor or blender, place the graham crackers into a bag and crush them with a rolling pin or a cup.} Place the graham cracker crumbs into a bowl and add in the ground cinnamon and sugar. Melt the butter and add it to the graham cracker crumbs.
Line a cupcake pan with cupcake liners and put one tablespoon of the graham cracker crumb mixture in the bottom of each liner. Press down the crumbs with your hand. Set aside.
In a large bowl, whip the cream cheese, vanilla extract and sugar (or Splenda) for a few minutes until fluffy. Add the Cool Whip and whip until smooth. To make the pumpkin mixture, combine the pumpkin puree, ground cinnamon, ground nutmeg, ground ginger and allspice. Add 2/3 cup of the cheesecake mixture to the pumpkin mixture. Stir with a spatula until the two batters are completely combined and there are no lumps.
Using a cookie dough scooper (or spoon), fill each cupcake liner with 1 1/2 scoop fulls of the cheesecake mixture. Each liner should be filled almost to the top. Now place three dots of pumpkin batter onto the cheesecake batter in the liner. I used a 1/4 teaspoon to scoop the pumpkin batter. Use a toothpick to swirl the two batters.
Once each cheesecake cup is swirled, place the cupcake pans into the fridge to chill for a few hours (I chose to keep mine in overnight) until firm. Serve and enjoy!

Beer Bread

Beer Bread
 Makes 6-8 Servings

•3 cups flour (sifted)
•1 Tablespoon baking powder (omit if using Self-Rising Flour)
•1 teaspoon salt (omit if using Self-Rising Flour)
•1/4 cup sugar
•1 (12 ounce) can beer
•1/2 cup melted butter (1/4 cup will work, but I use 1/2 cup)

 1. Preheat oven to 375 degrees. Prepare a loaf pan or 8" square pan.
   
 2. Mix dry ingredients first, combining them thoroughly before adding beer. (A whisk works great for this part). Add beer, then stir with a spoon until combined.
   
 3. Add a small amount of melted butter to bottom of pan. Pour batter into loaf pan.
   
 4. Pour melted butter over mixture.
   
 5. Bake 1 hour for a loaf pan, if you use a 8" square pan check it around 45 min. and every 5 min then on until done. Remove from pan and cool for at least 15 minutes. (Important, be sure to put an extra pan or some foil beneath your bread as the butter might overflow)

Turkey, Black Bean & Pumpkin Chili

Turkey, Black Bean & Pumpkin Chili
 Makes 10 servings

•2 tablespoons olive oil
•1 medium onion, chopped
•1 medium sweet yellow pepper, chopped
•3 garlic cloves, minced
•2 cans (15 ounces each) black beans, rinsed and drained
•1 can (15 ounces) solid-pack pumpkin
•1 can (14-1/2 ounces) Hunt's® Diced Tomatoes, undrained
•3 cups chicken broth
•2-1/2 cups cubed cooked turkey
•2 teaspoons dried parsley flakes
•2 teaspoons chili powder
•1-1/2 teaspoons ground cumin
•1-1/2 teaspoons dried oregano
•1/2 teaspoon salt
•Cubed avocado and thinly sliced green onions, optional

 1. In a large skillet, heat oil over medium-high heat. Add onion and pepper; cook and stir until tender. Add garlic; cook 1 minute longer.
 2. Transfer to a 5-qt. slow cooker; stir in the remaining ingredients. Cook, covered, on low 4-5 hours. If desired, top with avocado and green onions. Yield: 10 servings (2-1/2 quarts).

Asian Hoisin Pork Ribs

Asian Hoisin Pork Ribs

Ingredients  
   2 tablespoons honey 
   1 cup hoisin sauce 
   1/4 cup rice wine vinegar 
   1/2 cup honey 
   1/4 cup vegetable oil 
   3 tablespoons minced fresh garlic (or to taste, we like garlic so I add in lots!) 
   sesame seeds 
   5 lbs country-style pork ribs (cut into serving size pieces) 
   1 teaspoon black pepper 

Instructions
1.Combine the hoisin sauce, honey, oil, rice wine vinegar, garlic and black pepper in bowl.
2.Cut the ribs into serving size pieces and place in extra large heavy plastic resealable bag, pour the sauce over the ribs.
3.Seal the bag and place in a large bowl, refrigerate overnight.
4.Set oven to broiler heat.
5.Line a large baking sheet with heavy foil.
6.Arrange the ribs bone side down on the foil.
7.Transfer the marinade to a small saucepan and boil for about 7-8 minutes or until thick.
8.Brush the ribs with the marinade.
9.Broil for 4 minutes.
10.Turn the ribs over and baste generously with marinade; return to oven for another 4 minutes.
11.After 4 minutes remove the ribs, turn over and baste again.
12.Set the oven to 350 degrees.
13.Bake the ribs for about 40 minutes or until cooked through.
14.Sprinkle lightly with sesame seeds then serve.

Creamy No Bake Peanut Butter Pie 
Ingredients:

2 - 8oz packages cream cheese, softened
1 - cup sugar
2/3 - cup creamy peanut butter
2/3 - cup whipped topping
14 -  peanut butter cups,divided
1 -  chocolate crumb crust (9 inches) I used a Oreo crust

Directions:
In a small bowl, beat the cream cheese, sugar and peanut butter until light and fluffy. 

Fold in whipped topping

Coarsely chop half of the peanut butter cups; stir into cream cheese mixture. 

Spoon into crust. Quarter remaining peanut butter cups; arrange over the top. 

Refrigerate for at least 4 hours before serving. Yield: 6-8 servings.

Apple Crisp

Apple Crisp

Ingredients:
5 medium apples (I used Cortland & Granny Smith); peeled and sliced thin
2 tbs dark brown sugar
2 tbs of maple syrup
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ginger

FOR THE TOPPING:
1 1/3 cups flour
1 1/3 cups dark brown sugar
1/2 tsp cinnamon
1/3 cup old fashioned oats
1/2 cup room temperature butter

Directions:
Preheat oven to 350.
Grease a pie plate or 8x8 or 9x9 baking dish with baking spray.
In a large bowl toss apples. and the rest of the filling ingredients together. Pour into prepared baking dish.
For the topping whisk together flour, sugar, cinnamon, and oats. Cut butter in until it is a coarse meal.
Press topping on the apples. Bake for 40 minutes. Or until bubble. Serve with ice cream or fresh whipped cream.

Cheeseburger Sloppy Joes

Cheeseburger Sloppy Joes


  • 1 1/2 pounds ground beef
  • 1/2 teaspoon garlic powder
  • 1/4 cup ketchup
  • 2 tablespoons yellow mustard
  • 8 ounces Velveeta, cut into chunks 
  • chopped pickles, optional but good

  1. Buns for serving 
  2. In a pan cooking ground beef and garlic powder until beef is browned and cooked through. Drain fat off meat. 
  3. Stir in ketchup, mustard, Velveeta, and pickles. Stir over low heat until cheese is melted. 
  4. Serve over buns.
