Macaroni & Cheese for the Crockpot

Ultra Creamy Mac ‘n Cheese in the Slow Cooker!      
Ultra Creamy Mac ‘n Cheese in the Slow Cooker!
Ingredients
  • 2 cups uncooked macaroni noodles
  • 1 teaspoon onion powder
  • 1/2 teaspoon dry mustard powder
  • 1/2 teaspoon pepper
  • 3 cups cheddar cheese
  • 1 cup gruyere cheese (or you can use 4 cups cheddar cheese)
  • 1 can cream of chicken soup
  • 1/2 cup sour cream, regular or light
  • 1/2 cup mayonnaise (I used Hellmann's Light)
Instructions
  1. Boil macaroni noodles according to directions to make them al dente. (Mine boiled for 6 minutes). Drain and rinse under cold water.
  2. Combine all ingredients in the slow cooker and cook on high for 2 hours or low for 3 hours, stirring once or twice.
  3. Serve hot.
Notes
Be sure that your macaroni is cooked al dente before you put it in the slow cooker so it doesn't become mushy.
If you prefer or if you are short on time, you can bake this in the oven (and I have many many times!) Preheat the oven to 350 degrees. Bake 30 minutes covered and 30 minutes uncovered.

Honey BBQ Meatloaf

Ingredients

1 lb 90% lean ground beef
1 slice white bread, ground to crumbs in food processor -or-1/2 cup panko bread crumbs
2 tablespoons plus 2 teaspoons worcestershire sauce
1 tablespoon spicy brown mustard
3/4 cup smoky barbecue sauce, divided
2 tablespoons honey, divided
1 teaspoon salt
1 teaspoon black pepper

Directions

1. Toss one slice of soft white bread in your food processor and grind it into crumbs.

2. In a large bowl, use your hands to mix together the ground beef, fresh bread crumbs, 2 tablespoons worcestershire sauce, the spicy brown mustard, 1/2 cup of the barbecue sauce, 1 tablespoon honey, salt, and black pepper.

3. Shape the mixture into a long, thick log and place in an oiled baking dish. Be careful not to pack the meat too tightly or youll end up with a very dense, tough loaf.
In a small bowl, whisk together the remaining 1/4 cup barbecue sauce, 1 tablespoon honey, and 2 teaspoons Worcestershire sauce. Spread half of this mixture evenly all over the meatloaf. Reserve the other half for serving.

4. Bake for 45 minutes (350-375). Slice and drizzle with reserved honey barbecue sauce.

Recipe Introduction

If using a rice steamer, use 2 cups water.

List of Ingredients

1 beef bouillon cube
2 1/4 C. boiling water
1 C. regular long grain rice
1 C. carrot slices
2 T. scallion slices
1 T. margarine
1/2 tsp. dillweed
8 oz. cream cheese, cubed
2 T. mayonnaise


Recipe

Dissolve bouillon in water in saucepan; add rice, vegetables, margarine and dill weed. Cover; simmer 20 minutes or until water is absorbed and rice is tender. Remove from heat. Add cream cheese and mayonnaise; stir until cream cheese is melted.

Ingredients

1/2 cup sugar
1/2 cup firmly packed brown sugar
1/2 cup Land O Lakes® Butter, softened
1/2 cup peanut butter
1 teaspoon vanilla extract
1/4 teaspoon salt
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/4 cup sugar
48 milk chocolate candy kisses, unwrapped

Directions

Heat oven to 375°F.
Combine 1/2 cup sugar, brown sugar, softened butter and peanut butter in bowl. Beat at medium speed until light and fluffy. Add egg, vanilla and salt; continue beating until well mixed. Add flour and baking soda; beat at low speed, scraping bowl often, until well mixed.
Shape dough into 1-inch balls. (If dough is too soft, refrigerate 30-60 minutes.) Roll balls in 1/4 cup sugar. Place 2 inches apart onto ungreased cookie sheets.
Bake 8-10 minutes or until very lightly golden brown. Immediately press 1 chocolate kiss in center of each cookie. Remove to cooling racks.

"Bake a juicy and flavorful chicken every time with this family-favorite recipe for beer can chicken."
Ingredients:
1/4 cup garlic powder
2 tablespoons seasoned salt
2 tablespoons onion powder
1 tablespoon dried oregano
1 tablespoon salt
1 1/2 teaspoons ground black pepper
1 (12 fluid ounce) can light-flavored beer
(such as Bud Light®)
1 (3 pound) whole chicken
4 green onions, sliced
4 green onions, cut in half crosswise
1 (12 fluid ounce) can light-flavored beer
(such as Bud Light®)
Directions:
1.Preheat oven to 350 degrees F (175 degrees C).
2.Mix the garlic powder, seasoned salt, onion powder, dried oregano, salt, and ground black pepper in a small bowl; set aside. Pour 1/3 of one can of beer into the bottom of a 9x13-inch baking dish. Place the open beer can in the center of the baking dish.
3.Rinse chicken under cold running water. Discard giblets and neck from chicken; drain and pat dry. Fit whole chicken over the open beer can with the legs on the bottom. With the breast of the chicken facing you, use a paring knife to cut a small slit on each side and press the tip of each wing into the slit to encourage even cooking.
4.Rub the prepared seasoning mixture over the entire chicken. Pat the sliced green onions around the whole chicken evenly. Some will fall into the beer, that's fine. Press the halved green onions into the top cavity of the chicken. Open the remaining beer and pour 1/2 of it into the pan under then chicken. Reserve the remaining beer.
5.Bake the chicken in the preheated oven. After 45 minutes, pour remaining beer into the pan under the chicken. Continue baking until no longer pink at the bone and the juices run clear, about 30 additional minutes. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 180 degrees F (82 degrees C). Remove the chicken from the oven and discard the beer can. Cover the chicken with a doubled sheet of aluminum foil, and allow to rest in a warm area for 10 minutes before slicing

Beef Stew

Time: 10 minutes prep + 4-8 hours crock pot cooking
Yield: 5 servings
 
1 pound beef stew chunks
4 carrots, sliced
4 medium potatoes, cubed
1 large onion, cut into chunks
1 bay leaf
1  1 oz. package Lipton Onion Soup Mix
2  10.5 oz cans cream of mushroom soup
1  8 oz can tomato sauce
 
1. Cut up your vegetables.
2. Spray the inside of your crock pot. Layer the beef, carrots, potatoes, and onion in the old crock. Place the bay leaf on top.
3. In a medium sized bowl combine the Soup Mix, cream of mushroom soup (undiluted) and  tomato sauce. Stir them all around until mixed well.
4. Pour the soup mixture over the top of the veggies and beef. Don’t stir.
5. Cook on high for 4 hours, or on low for 8.
