Yellow Cake - Adapted from Rachel

3/4 C flour
2 1/2 tsp. baking powder
1 tsp. salt
1 1/2 C sugar
1/2 C
butter, oil, shortening, or lard*
2 eggs
1 1/2 tsp. vanilla
1 1/4 C
milk
*I used ~1/3 C applesauce and the remaining bit was topped off with
olive oil
Mix together the flour, baking powder and salt. In your mixing
bowl, cream together the sugar and oil/butter/lard until light and
fluffy.
Then, add in the eggs, one at a time, along with the vanilla.
Mix well.
Add the flour mix alternately with the milk beating until you
have a smooth batter.
Pour into greased baking pans -- I used 2 9-inch
round cake pans.
Bake at 350 for 25-30 minutes, until the cake springs
back when touched and a toothpick comes out clean. Cool in the pan for a few
minutes, and then invert onto a wire rack to cool completely.
Then, frost
with dark
chocolate decadent frosting....
