Onion Roasted Potatoes

ONION-ROASTED POTATOES


2 pounds un-peeled red potatoes, sliced 1/2 inch thick
2 tbsp. olive oil oil
1 envelope dry onion soup mix

1. Combine all the ingredients in a large plastic bag; shake until well coated. Empty the bag into an ungreased 13x9-inch baking dish.
2. Cover and bake at 350ยบ for 35 minutes, stirring occasionally. Uncover and bake 15 minutes longer or until potatoes are tender. Yield: 6 servings.
