A little review

I received 2 full size bottles of Torani syrups from SheSpeaks. I received Salted Caramel and Gingerbread. I don't know which I like better because they are both amazing. The salted caramel, however, was a surprise. I wasn't expecting it to be as good as it is to be honest with you. Thanksgiving Yummies

Tiramisu Cheesecake(makes one 9-inch cake)

For the crust:
1 ½ cups ground graham crackers
3 tablespoons granulated sugar
6 tablespoons butter, melted

For the cheesecake:
2 ½ pounds cream cheese, at room temperature
1 cup granulated sugar
2 eggs, at room temperature
3 egg yolks, at room temperature
3 tablespoons cornstarch
3 tablespoons Kahlua
1 tablespoon Bailey’s Irish Cream
4 teaspoons espresso coffee powder

¼ cup chocolate shavings, for the garnish
Sweetened whipped cream, for the garnish

Preheat oven to 375ºF and butter the bottom of a 9-inch spring form pan
Mix together the cookie crumbs, sugar and melted butter. Press into the spring form pan, going up the side of the pan only 1/4 inch. Bake 8 minutes. Cool completely.

Decrease oven temperature to 325ºF
In a stand mixer with a paddle attachment, cream the cream cheese until it’s smooth. Add the sugar and mix together. Add the eggs and yolks one at a time; mix each in before adding the next. Add the cornstarch and mix together. In a small bowl combine the Kahlua, Bailey’s and coffee powder and stir until the coffee powder has dissolved. Add to the cream cheese mixture and mix together.
Wrap two layers of aluminum foil around the sides of the spring form pan. Pour the cheesecake filling into the pan on top of the cooled crust. Bake in a water bath for 55-60 minutes. The outer edges should be set and the center will still jiggle a little when you move it. (The cake continues cooking after it’s removed from the oven.) Cool for 30 minutes, then remove the spring form rim. Cool completely, then place into the refrigerator for at least 8 hours, overnight is best.

Right before serving, sprinkle the grated chocolate over the cheesecake and serve with whipped cream.

Ground Beef Stroganoff

    Ground Beef Stroganoff




    List of Ingredients


    • 2 lbs ground beef, or stew meat
    • 2 med. onions, chopped
    • 2 cloves garlic, minced
    • 1 small can sliced mushrooms, drained
    • 2 1/2 tsps salt
    • 1/4 tsp pepper
    • 1 cup beef bouillon
    • 3 Tbsps tomato paste
    • 1 1/2 cups sour cream, mixed with 4 Tbsps flour


    Instructions


    1. Brown beef in large skillet; add onions, garlic and mushrooms.
    2. Saute until onion is golden brown.
    3. Put in crockpot and stir in all remaining ingredients.
    4. Cover and cook on low 6 to 8 hours.
    5. Serve over hot buttered noodles or rice.

Dinner

This is THE best pot pie I've ever had in my life!!! I've been using this recipe for years. It is the only pot pie my husband will eat.


Cheddar Chicken Pot Pie

List of Ingredients

    1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
    1 cup milk, divided
    1/2 cup onion, chopped
    1 package (3 ounces) cream cheese, softened
    1/2 cup shredded carrots
    1/4 cup grated Parmesan cheese
    1/2 tsp. salt
    3 cups cubed cooked chicken
    2 cups broccoli florets
    1 egg
    1 tbsp. oil
    1 cup buttermilk complete pancake mix  (I used homemade baking mix)
    1 cup shredded Cheddar cheese

    Recipe


    1. In a large saucepan, combine soup, 1/2 cup milk, onion, cream cheese, carrots, Parmesan cheese and salt. Cook and stir over medium-high heat until the mixture is hot and cream cheese is melted. Stir in the chicken and broccoli; heat through.

    2. Pour into an ungreased 2-quart oblong baking dish.

    3. In a medium mixing bowl, combine the egg, oil and remaining milk. Add the pancake mix and Cheddar cheese; blend well. Spread over hot chicken mixture.

    4. Bake, uncovered, at 375º for 20 to 25 minutes or until golden brown. Yield: 6 servings.

Dinner recipe

Chili (or as my kids call it: Mom's Famous Chili)

List of Ingredients:

1 lb ground chuck
1 16oz can diced tomatoes
3 T. Chili powder
1 t. Salt
1 t. Dried Oregano
2 16oz cans kidney beans - undrained
3 lg Garlic Cloves (or 1 T. minced garlic in the jar)
1 lg onions chopped
1 8oz can tomato sauce
1 t. garlic powder
1½ t. Ground Cumin
1 t. Black Pepper

Optional
Corn Chips, Shredded Sharp Cheddar Cheese, Sliced Green Onions


Recipe


Cook chuck, onions and garlic until meat is browned, stirring until meat
crumbles, drain. Dump it all into a crock pot. Mix in all other
ingredients except the optional ones.  Cook on low for 6+ hours.

Tonight's dinner recipe

I made this tonight and it was so good. I halved the recipe for my husband and I and had plenty of leftovers. I got it from Jamie Cooks It Up's blog.

 

Chicken and Rice Bake


Time: 15 minutes prep + 2 1/2 hours baking
Yield: 7 servings
Recipe adapted from Pam Willahan
 
2 C white rice (not instant)
2 C milk
2 C hot water
4 bullion cubes
2 cans cream of chicken soup (I use 98%fat free)
4 chicken breasts cut into chunks
1 C grated Parmesan cheese
2 small cans mushrooms (optional)
salt and pepper
 
1. Spray the inside of a 9x13 casserole dish.
2. Pour the rice on the bottom of the dish.
3. Dissolve the bullion cubes into the hot water.
4. Pour the milk, bullion/water mixture, and cream of chicken soup, and 1/2 of the cheese over the rice. Stir in the pan until it is well blended.
5. Add a bit of salt and pepper.
6. Layer the chicken and mushrooms in the pan.
7. Cover with remaining cheese.
8. Cover with tin foil and bake at 350 for 2 hours.
9. Uncover and bake for another 30 minutes.
