Shrimp Pepper Jack Mac & Cheese

Shrimp Pepper Jack Mac & Cheese

Total Time: 30 minutes
Yield: 6 servings

Ingredients
  • 3 c. shell macaroni
  • 2 Tbsp canola oil
  • 2 garlic cloves, crushed
  • 2 1/4 c. unsalted chicken stock, divided
  • 1/2 tsp Worcestershire sauce
  • 1/2 tsp ground mustard
  • 1/2 c. skim milk
  • 8 Tbsp all-purpose flour
  • 4 oz 1/3-less-fat cream cheese
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 3/4 c. shredded pepper jack cheese
  • 12 oz popcorn shrimp
 
Instructions
  1. Preheat broiler to high.
  2. Prepare shrimp according to package directions.
  3. Meanwhile cook pasta according to directions ommitting any salt and fat called for in directions. Drain and set aside.
  4. Meanwhile heat skillet over medium heat. Add canola oil to pan, swirling to coat pan. Add garlic to pan and cook about 3 minutes until garlic is fragrant, but do not brown garlic. Stir frequently. Stir in 1 c. chicken stock and bring to a boil. Boil for 1 minutes.
  5. In a mixing bowl combine the rest of the stock, milk and flour. Whisk until flour is dissolved. Add milk mixture to the garlic mixture in skillet. Stir with whisk and bring to a boil. Boil for about 3 minutes or until mixture thickens. Remove from heat and add cream cheese, Worcestershire sauce, mustard, salt and pepper stirring until cream cheese is melted and mixture is smooth.
  6. Add cheese mixture to pasta in saucepan stirring until coated. Let stand 5 minutes. Pour mixture into 6 ramekins or 2 quart baking dish coating with cooking spray.
  7. Evenly distribute shrimp on top of the pasta.
  8. Sprinkle pepper jack cheese on top. Broil for 3-5 minutes or until cheese is melted and just starting brown. Let stand 5 minutes before serving.

Tater Tot Casserole

Tater Tot Casserole

Ingredients:
1 1/2 - 2 lbs. ground beef or ground turkey
1/2 - onion, diced
1 - 32 oz package ore ida crispy crowns or tater tots
1 - 10 oz can cream of mushroom soup
1 - 8 oz container sour cream or light sour cream
1 - low fat cup milk
2 - cups grated cheddar cheese
pepper, to taste
season salt, to taste
garlic salt, to taste

Directions:
Brown ground beef and diced onions, adding, pepper, seasoning salt and garlic salt to taste. Drain.

Pour ground beef & onion mixture into the bottom of a 9 x 13 casserole dish. In a separate bowl mix together the soup, sour cream and milk.

Pour the soup mixture over on top of the ground beef layer spread evenly to cover the meat mixture. Top with tater tots, sprinkle with grated cheese over the entire casserole.

Bake at 350 degrees uncovered for 30 minutes or until the casserole is bubbly and cheese is completely melted.
